Maple Syrup Taffy Recipe
Maple Snow Lollipops
Enjoy a delightful treat made from fresh snow and real maple syrup. A fun recipe for all ages!
Ingredients
- 1 gallon clean fresh snow
- 2 cups real maple syrup
- 15 wooden pop sticks
Directions
- Pack the clean, fresh snow into a large bowl or baking dish. Smooth the top, then place it in the freezer to keep it cold.
- Pour the maple syrup into a large saucepan and bring it to a boil. Stir occasionally with a wooden spoon, cooking over medium-low heat.
- As the syrup boils, drop a small amount into cold water to check the consistency. It should form a firm ball when it hits the water.
- For accurate results, use a candy thermometer. The syrup is ready when the temperature reaches between 235F and 245F (112C to 118C).
- Once the syrup reaches the correct temperature, remove the snow from the freezer and place it on the counter.
- Drizzle about 2 tablespoons of syrup per piece in thin, 5-inch-long strips directly onto the snow.
- Allow the syrup strips to cool and firm up for 3 to 5 seconds.
- Once firm, carefully pull the candy strips out of the snow, then wind them around the end of a wooden pop stick to create a lollipop.
- Enjoy your maple snow lollipops while they are still slightly warm!

Must use authentic maple syrup, try to source it from a local producer if you can! We used syrup from our own maple trees and it worked like a charm! At first, it seemed a bit crisp on the snow, but as soon as we rolled it onto the sticks, it became wonderfully smooth and sticky once it warmed up. My kids absolutely adored it. We've now started a new family tradition!

Unfortunately, it did not work as expected. It melted into the snow right away, even when the snow was hard-packed and the temperature was zero degrees.

I had a blast making this with my grandkids on our first snow day! I didn't have pure maple syrup, so I used maple flavored agave instead, and it turned out great! I may have cooked the syrup a bit too long as it ended up more like hard candy. I drizzled it on the snow and the kids just grabbed the pieces. Overall, it was a great success!
