Neapolitan Struffoli Recipe

Ingredients
- 5 cups gluten-free all-purpose flour (such as King Arthur)
- Zest of 1 lemon
- Zest of 1/2 orange
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup extra-virgin olive oil
- 6 jumbo eggs
- 1/2 cup cane sugar
- 2 quarts vegetable oil for frying, or as needed
- 1 tablespoon vanilla extract
- 2 cups honey
- 1/4 cup multi-colored sprinkles, or more to taste
Directions
- Step 1: In a food processor, combine the flour, lemon zest, orange zest, baking powder, and salt. Pulse until well blended.
- Step 2: In a separate bowl, whisk together the eggs and sugar. Add the olive oil and vanilla extract, then beat again until smooth.
- Step 3: Mix the wet ingredients with the flour mixture. Use your hands to knead until the dough comes together.
- Step 4: Line a baking sheet with parchment paper. Heat the frying oil in a deep saucepan over medium heat until it reaches 375F (190C), about 5 minutes.
- Step 5: Place the dough on a floured surface. With floured hands, continue kneading until smooth. Shape into a flat loaf about 10 inches long.
- Step 6: Cut the loaf into long ropes, then slice the ropes into 1/2-inch pieces. Place the pieces onto the prepared baking sheet.
- Step 7: Fry the dough pieces in small batches until golden brown, about 2 minutes per batch. Transfer them onto a plate lined with paper towels to drain excess oil.
- Step 8: In a saucepan, gently warm the honey until it becomes fluid, about 1 minute. Pour the hot honey over the fried struffoli and toss to coat evenly.
- Step 9: Finish by sprinkling generously with colorful sprinkles. Serve warm or at room temperature.
