Banana Pudding Recipe
Ingredients
- 4 large eggs
- Custard:
- cup white sugar
- teaspoon salt
- cup all-purpose flour
- 1 tablespoon all-purpose flour
- 2 cups milk
- 1 tablespoon banana liqueur (optional)
- teaspoon vanilla extract
- 1 tablespoon cold butter
- Pudding:
- 3 very ripe bananas, sliced (or more to taste)
- 1 teaspoons freshly squeezed lemon juice
- 1 (12 ounce) package miniature vanilla wafers
- Meringue Topping:
- 1 teaspoon cream of tartar
- 2 tablespoons white sugar
Directions
- Separate the eggs: Place the egg whites in the bowl of a stand mixer and the yolks into a saucepan.
- Prepare the custard: Add sugar, salt, and 1/3 cup plus 1 tablespoon of flour to the egg yolks. Gradually pour in about a quarter of the milk and begin whisking. Add the remaining milk and whisk until the mixture is smooth.
- Cook the custard: Over medium heat, stir the mixture constantly, checking the temperature by occasionally dipping your finger into it. Keep whisking until the custard thickens enough to form ribbons when lifted with a whisk.
- Finish the custard: Remove from heat and stir in banana liqueur, vanilla extract, and cold butter. Whisk until the butter fully dissolves. Set the custard aside.
- Preheat the oven: Set the temperature to 400F (200C).
- Assemble the pudding: Toss the banana slices with lemon juice. Spread a quarter of the custard over the bottom of a baking dish. Add a single layer of vanilla wafers on top, then cover with half of the bananas and half of the remaining custard. Add another layer of vanilla wafers (use fewer wafers this time). Top with the remaining bananas and custard. Smooth out the top and gently tap the dish against the counter to settle the pudding.
- Make the meringue topping: Add cream of tartar to the egg whites and beat using the whisk attachment until foamy. Gradually add the sugar and continue to beat until stiff peaks form, but not dry.
- Finish the pudding: Spread the meringue over the pudding using a soft spatula, creating ridges for texture.
- Bake: Place the dish in the preheated oven and bake until the meringue is golden brown, about 7 to 10 minutes.
- Serve: Allow the pudding to cool before serving. It can be enjoyed warm or chilled, depending on your preference.

After 25 years of marriage, I have finally found a recipe that my hubby LOVES! Since it is difficult to eat the whole thing in one sitting, I divide it up into 3 Corelle 28oz pasta bowls. Though these are not rated for the 400 degree temp in the recipe, since the cooking time is so short, I have not had any issues in baking the pudding in them. The wonderful thing about these bowls is that I have the lids that go on them. This way, we can eat them over several nights without the bananas going bad. I also have used 1/2 t of banana flavoring in place of the liquor.

I am a 73-year-old guy who has owned three "coffee and dessert" shops since 1985. I made everything from scratch, including the coffee, as much as possible (I imported green coffee beans and roasted them). I feel qualified to say that this is as good a Banana Pudding recipe as I've ever had. With a few tweaks, it will be something I don't say too much . . . perfect! First, I made the recipe *pretty much* as written, taking someone else's advice and cutting the sugar back to 1/4 cup. Next time I'll eliminate the sugar. I think the natural sugars produced by the bananas are all that is needed. 2) The recipe doesn't say, but the pudding should be baked on the lower rack of the oven because the meringue will burn otherwise 3) Fresh bananas are DELICIOUS! Three-day old were not available, but after 24 hours, the difference can’t be told.

It's a pandemic, so I didn't have vanilla wafers this Christmas morning. I did have phyllo dough though. I pre baked about 10 buttered layers in Pyrex dish and doubled recipe. Yummy, I like it chilled.

absolutely delicious. I couldn't find the vannilla wafers in our grocery store here in switzerland so i used the biscuits for Tiramisu and that was very nice. Soaked up the custard and very soft.

I totally loved it, and NO baking was a plus! I prepared it exactly as instructed, with the exception of the cream of tartar-I used lemon juice instead. I’m new to the baking scene and didn’t have a hand blender, so I whipped the meringue by hand....needless to say I’ve since bought one.

Fabulously delicious with the pillowy meringue combined with the yummy custard. I think the sweetness was just right. Serving it chilled might take it down a notch. I used bourbon in place of the banana liqueur. Other than that and using just 2 bananas, followed the recipe as written. Make this one!

Chilled pudding and folded whipped heavy whipping cream to cool pudding then finished receipe as written. Best Banana pudding ever.

The pie had a very good flavor but I should have read the other reviews because it was way too sweet, 2/3 cup would have been enough sugar.

1st, love this recipe! It's great! My mistake was using a baking dish that was too large for the banana slices and not having Nilla Vanilla Wafers. BUT, both of those issues turned out to be serendipitous. I used blueberries where I ran out of banana, so, about 1/3 of the dish, and I used small Madeleine's instead of the wafers. Both rocked! In fact, my son and I actually loved the blueberry portion as much as the banana. It's a new recipe, "Southern-Style Baked Blueberry Pudding!" In any case, this recipe is really, really good.

Made this using pieces of home made rum cake I had in my freezer a month after easter, instead of the vanilla wafers. Everyone loved it. I actually don't care for the traditional banana pudding made with purchased wafers, so I wouldn't make it that way. But was looking for a way to use up that rum cake and when looking for a way to use leftover cake of any kind where there's not enough to go around, this will be my go-to.

I recently came upon this recipe right before the holidays, and I ended up making it twice within a couple weeks. This recipe is soooooo good. This is way better than any recipe that calls for banana pudding. I had a couple friends take two or three helpings of it after dinner. While I'm glad they enjoyed it, I was secretly mad because they did not leave much for my husband and I to enjoy! Haha! So good.

I'm allergic to bananas, so I rarely get to eat this type of dessert. This was my first time making it. I decreased the sugar like others suggested. Omitted the bananas, of course. I added chocolate chips like Chef John mentioned in the video. Super tasty! Would definitely make it again.

Delicious, perfect spring dish , just made 1 little change, instead of vanilla wafers, I added hazelnut wafers.
