Couscous Pudding with Caramelized Pecans Recipe

Original recipe (1X) yields 4 servings:
- Couscous Pudding:
- cup water
- cup couscous
- teaspoon salt
- 2 cups fat-free milk
- cup white sugar
- 2 eggs
- teaspoon vanilla extract
- Caramelized Pecans:
- 3 tablespoons butter
- cup chopped pecans
- cup white sugar
Directions
Step 1: Bring water to a boil in a large saucepan over medium heat. Stir in couscous and salt. Remove from heat, cover, and let stand until water is absorbed, about 5 minutes.
Step 2: Stir in the milk and cup sugar into the couscous mixture, then bring to a boil. Reduce heat to medium-low, and cook while stirring until the mixture is slightly thickened, around 10 minutes.
Step 3: Remove from heat and whisk in the eggs. Return to the stovetop and cook, stirring frequently, until the pudding reaches a creamy consistency, about 5 minutes.
Step 4: Remove from heat and stir in the vanilla extract. Let the pudding cool to room temperature, stirring occasionally, which will take about 30 minutes.
Step 5: Spoon the pudding into bowls, cover loosely with plastic wrap, and refrigerate for at least 1 hour, or until fully set.
Step 6: Meanwhile, melt the butter in a small saucepan over medium-low heat. Add the chopped pecans and cup white sugar. Cook, stirring frequently, until the pecans are coated and the caramel thickens, about 5 minutes.
Step 7: Serve the caramelized pecans and sauce either on top of the pudding or on the side.
