Ube Panna Cotta Recipe

Original recipe (1X) yields 6 servings
- 1 ube (purple yam), peeled
- 1 cups whole milk, divided
- 1 cup coconut milk
- cup white sugar
- 1 (.25 ounce) package unflavored gelatin
Directions
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil.
- Add the peeled ube to the steamer, cover, and steam for about 20 minutes, or until the ube is tender.
- Let the ube cool for about 10 minutes or until it can be easily handled.
- Puree the steamed ube in a blender or food processor. Alternatively, mash it thoroughly by hand until smooth.
- In the blender or food processor, combine 1 cup of the pured ube, cup of whole milk, coconut milk, and sugar. Blend until the mixture is completely smooth.
- Pour the remaining cup of whole milk into a saucepan. Sprinkle the gelatin over the milk and let it sit for 5 minutes to soften.
- Heat the milk and gelatin mixture over medium-low heat, stirring occasionally, until the gelatin is fully dissolved, about 3 to 5 minutes.
- Pour the smooth ube mixture into the saucepan with the gelatin-milk mixture. Increase the heat to medium and cook, stirring occasionally, until steam begins to rise from the mixture, about 3 to 5 minutes.
- Carefully pour the mixture into individual serving glasses or molds.
- Transfer the glasses or molds to the refrigerator and chill until set, approximately 3 hours.
