Dark Chocolate Passover Brownies Recipe

Ingredients

  • Cooking spray
  • 2 cups white sugar
  • 1 cup unsalted butter, softened
  • 4 eggs
  • teaspoon vanilla extract
  • teaspoon salt
  • pound matzo cake meal
  • 1 cup unsweetened cocoa powder
  • teaspoon ground cinnamon (optional)
  • 1 cup semisweet chocolate chips

Directions

  1. Preheat the oven to 350F (175C). Lightly grease a 9x13-inch baking pan with cooking spray.
  2. In a large bowl, beat the sugar and butter using an electric mixer on medium-high speed until the mixture becomes light and fluffy.
  3. Add the eggs, vanilla extract, and salt to the bowl, mixing until fully combined.
  4. Gradually incorporate the matzo meal, cocoa powder, and cinnamon (if using) with a wooden spoon.
  5. Switch to the electric mixer and beat the batter on medium speed for 1-2 minutes, scraping the sides of the bowl, until the mixture is smooth and fully combined.
  6. Fold in the chocolate chips until evenly distributed throughout the batter.
  7. Pour the batter into the prepared pan, spreading it out evenly.
  8. Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the brownies cool in the pan for about 10 minutes.
  10. After cooling slightly, slice the brownies into 18 squares and transfer them to a serving plate.
  11. Place the plate on a wire rack and allow the brownies to cool completely, which should take about 30 minutes.

Cook's Notes:

  • You can mix the sugar and butter by hand if you prefer not to use an electric mixer in step 2.
  • The cinnamon is optional but adds a nice touch to the flavor. Feel free to omit it if desired.
  • If you'd like, you can also add 1 cup of chopped nuts along with the chocolate chips for extra texture and flavor.
  • Don't worry if the batter doesn't reach the edges of the pan in step 6. It will spread during baking.
