Dark Chocolate Passover Brownies Recipe

Ingredients
- Cooking spray
- 2 cups white sugar
- 1 cup unsalted butter, softened
- 4 eggs
- teaspoon vanilla extract
- teaspoon salt
- pound matzo cake meal
- 1 cup unsweetened cocoa powder
- teaspoon ground cinnamon (optional)
- 1 cup semisweet chocolate chips
Directions
- Preheat the oven to 350F (175C). Lightly grease a 9x13-inch baking pan with cooking spray.
- In a large bowl, beat the sugar and butter using an electric mixer on medium-high speed until the mixture becomes light and fluffy.
- Add the eggs, vanilla extract, and salt to the bowl, mixing until fully combined.
- Gradually incorporate the matzo meal, cocoa powder, and cinnamon (if using) with a wooden spoon.
- Switch to the electric mixer and beat the batter on medium speed for 1-2 minutes, scraping the sides of the bowl, until the mixture is smooth and fully combined.
- Fold in the chocolate chips until evenly distributed throughout the batter.
- Pour the batter into the prepared pan, spreading it out evenly.
- Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the brownies cool in the pan for about 10 minutes.
- After cooling slightly, slice the brownies into 18 squares and transfer them to a serving plate.
- Place the plate on a wire rack and allow the brownies to cool completely, which should take about 30 minutes.
Cook's Notes:
- You can mix the sugar and butter by hand if you prefer not to use an electric mixer in step 2.
- The cinnamon is optional but adds a nice touch to the flavor. Feel free to omit it if desired.
- If you'd like, you can also add 1 cup of chopped nuts along with the chocolate chips for extra texture and flavor.
- Don't worry if the batter doesn't reach the edges of the pan in step 6. It will spread during baking.
