Gluten-Free Dairy-Free Brownies Recipe
Ingredients
- 1 cup vegan semi-sweet chocolate chips
- cup canola oil
- 2 eggs, beaten
- 2 teaspoons instant coffee granules
- cup white sugar
- cup cocoa powder
- cup gluten-free flour
- 1 teaspoon baking soda
- 1 tablespoon coffee-flavored liqueur
- 1 teaspoon vanilla extract
Directions
Step 1: Preheat the oven to 350F (175C).
Step 2: In a large glass bowl, combine the vegan chocolate chips and canola oil. Heat in the microwave for 30-second increments, stirring in between, until fully melted (about 2-3 minutes).
Step 3: Stir the beaten eggs and instant coffee granules into the melted chocolate mixture until well combined.
Step 4: Sift the sugar, cocoa powder, gluten-free flour, and baking soda together into a separate bowl. Add this dry mixture to the melted chocolate mixture, stirring until fully incorporated.
Step 5: Pour the coffee liqueur and vanilla extract into the batter and stir to combine.
Step 6: Pour the brownie batter into an 8-inch square baking dish. If desired, line the bottom of the dish with parchment paper for easy removal, but this is optional.
Step 7: Bake the brownies in the preheated oven for 20-25 minutes, or until the edges begin to dry out and a toothpick inserted into the center comes out with a few moist crumbs.

These cookies are incredibly decadent and packed with intense chocolate flavor. They were so crumbly that we ended up enjoying them with a fork.
