Baileys Irish Cream Brownies Recipe
Ingredients
- 2 (18 ounce) packages fudge brownie mix (such as Duncan Hines)
- 1 cup Irish cream liqueur (such as Baileys)
- cup vegetable oil
- 2 large eggs
- 1 cup unsalted butter, softened
- 5 tablespoons Irish cream liqueur (such as Baileys)
- 4 cups confectioners' sugar, or as needed
Directions
- Preheat the oven to 350F (175C). Butter the bottom of a 10 x 15 -inch jelly roll pan.
- Prepare the brownies: Empty both brownie mix packages into a large bowl. Add Irish cream liqueur, vegetable oil, and eggs. Beat with an electric mixer until smooth.
- Spread the batter: Pour the prepared batter into the buttered jelly roll pan. Make sure it is evenly spread.
- Bake the brownies: Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center comes out clean. Once done, remove from the oven and set aside to cool for 20 to 30 minutes.
- Make the frosting: In a large bowl, beat the softened butter until smooth. Add the Irish cream liqueur and continue beating until creamy.
- Add the sugar: Gradually add the confectioners' sugar, 1 cup at a time, beating well after each addition. Keep adding until the frosting reaches the desired stiffness.
- Frost the brownies: Once the brownies have cooled, spread the frosting evenly over the surface.
- Cut into squares: Cut the frosted brownies into 30 even squares. Serve and enjoy!

These brownies were just as described - gooey, super sweet and addictive! They were very simple to make and well enjoyed at the St Pats party last night. I did have to cook the brownies a bit longer than 20 minutes. Bravo!

i want to put an icing over my brownies but not sure if i use this rrecipe can i put a chocolate glaze over it ?

These were good, but I couldn't taste any Baileys 😒 I halved the recipe and baked it an 11x7 pan...perfect at 20 minutes. I tasted a corner of the brownies before they were cooled, and decided I needed more Baileys in the frosting. Put the full amount of Baileys, instead of 1/2, and added powdered sugar until it was the consistency I wanted.

I think it turned out deliciously! I added a little green gel coloring to the frosting for St. Patrick's Day. I have been wanting to make this and the Bailey's was really obvious in the brownie and frosting. I used a 9x13" pan. I baked about 20 min longer and it still turned out very moist. Also I bought a milk chocolate brownie mix. I don't know if that made a difference in it's taste. It's very easy and quick to make last minute.

Delicious! I made this in an 8 x 8 pan and halved the recipe. For the frosting I creamed together equal parts butter, cream cheese, and butter-flavored Crisco, 2 T Bailey's, and then just added powdered sugar until it reached the consistency I wanted. I had quite a bit of frosting leftover, too, which I put on PB cookies. ;)

This is really good! Some of the reviews scared me, but based on one review I did worry about the box mix not being as big as it called for. I had two 16.3 oz box mixes, so I cut the oil almost in half (I always try to cut back the oil)and cut back the Baileys by about a fourth. Still spread it into the jelly roll pan and baked it until the toothpick was pretty clean…a bit over the 20 minutes. I had made sure to really grease up the pan with a thick layer of margarine. Also halved the frosting recipe to make them healthier (ha ha). They would be incredible with the full amount of frosting but either way they are really good. Came out of the pan well and weren’t gooey I have to wonder if some people are not used to using a toothpick in brownies, since you normally don’t.

I made these a little different, but they turned out great! I used one box of brownie mix, 2/3 cup oil, 2 eggs, and 1/4 cup Irish cream instead of the water called for on the box. For the frosting, I used a cube of butter, 2 cups of powdered sugar, and 2-4 tablespoons of Irish cream. It was so good, and you could definitely taste the Irish cream!!!

Pretty good but don’t need the extra calories of the frosting, although it did have a light taste of the Baileys. I baked it in a 9x13 and gave it 5 extra minutes in the oven.

This brownie is deliciously rich, so rich that half are still sitting on my kitchen table even after a St. Patty's day party... Everyone loved them but could never eat a whole brownie themselves. It was the icing. I even cut the butter down to a half cup (used light earth balance butter trying to cut calories where I can) and I just kept having to add more confectioner's sugar. It was a bit ridiculous with probably a quarter inch of icing, maybe more at some spots.. I added green food coloring to the icing for fun. And dark chocolate chips to the brownies. They melted, kind of a waste. They weren't at all necessary. There is enough going on with this recipe as is. Probably wouldn't make the icing again..but I will definitely be using this brownie in future desert endeavors.

This has made us quite popular for years at St. Patrick's Day pot luck type parties. We call it "Bailey's & Bushmills Brownies" since we split the alcohol 50/50 between the Bushmills Irish Whiskey and the Bailey's Irish Cream. Also, we put up a sign "Adults Only". We have had to double up on the quantity we bring since they have gotten so popular that our brownies disappear ahead of the entries ... :-) ...

Don’t know if I did something wrong, but the texture of these brownies was hard and they were not as flavorful as expected. The frosting was good, though.

This recipe did not turn out for me. I followed the directions specifically and I was looking forward to enjoying it. I could not enjoy or share any of it because it was solid. I could not cut into it at all. I ended up throwing it, and the jelly roll pan, away. It was a big waste.

The biggest brownie mix that I found was Betty Crocker at 17.8 oz. That is 2 oz less than called for in the recipe. I don't know if this is the reason the brownies stuck to the pan. At this point, I decided not to make the frosting since it would be almost impossible to frost these broken up brownies. They are very good as is and probably even better with the frosting. But because of these issues, I will not find out since I will not be making them again.

These brownies were amazing! Easy to make, moist and the Bailey flavor popped in the brownie and icing. Definitely planning on making this again.
