Apricot and Peach Fried Pies Recipe
Ingredients
- Dough:
- 4 cups all-purpose flour
- 2 teaspoons salt
- 1 cup shortening
- 1 cup milk
- Filling:
- 8 ounces dried apricots
- 1 (6 ounce) package dried peaches
- cup white sugar
- Water to cover
- 2 cups vegetable oil for frying
Directions
Step 1: To make the crust, combine flour and salt in a large bowl. Cut in shortening until the mixture is crumbly. Gradually add the milk and stir until a dough forms a ball.
Step 2: Roll out the dough on a floured surface and cut into 18 6-inch circles. Set them aside.
Step 3: For the filling, combine apricots, dried peaches, and sugar in a large saucepan. Add enough water to cover the fruit, and cook over low heat until the fruit breaks down.
Step 4: Once the fruit has softened, remove the lid and continue cooking until the water evaporates and the filling thickens.
Step 5: Heat oil or shortening in a small, high-sided skillet over medium heat. Spoon equal amounts of the fruit filling onto each dough circle and fold them in half to form a pie. Seal the edges with a fork dipped in cold water.
Step 6: Fry the pies in hot oil, turning them until golden brown on both sides. Drain the pies on paper towels to remove excess oil.
Cook's Note: If using shortening, like Crisco, melt it so its about two inches deep in the skillet for frying.
