The Best Cherry Pie Recipe

Cook Time: 50 minutes

Ingredients

  • 1 (15 ounce) package double crust ready-to-use pie crust
  • 3 cups cherries, pitted
  • cup white sugar
  • 3 tablespoons cornstarch
  • teaspoon almond extract
  • 2 tablespoons salted butter, cut into bits

Directions

  1. Preheat the oven to 400F (200C). Line a baking sheet with aluminum foil.
  2. Place the bottom pie crust into a 9-inch pie pan, then prick the bottom with a fork. Bake in the preheated oven until the crust is lightly browned, about 8 minutes. Let it cool for 5 minutes.
  3. In a bowl, combine cherries, sugar, cornstarch, and almond extract. Pour this mixture into the par-baked pie crust and dot with butter.
  4. Cover with the top pie crust, crimp the edges to seal, and cut vents into the top using a sharp knife. Place the pie on the prepared baking sheet.
  5. Bake the pie in the preheated oven for 30 minutes. If the crust is browning too quickly, cover with an aluminum foil tent. Continue baking until the crust is golden brown and the filling is bubbly, about 10 to 20 more minutes.
  6. Let the pie cool on a wire rack for about 15 minutes before serving.

This was by far the best cherry pie I've ever made or eaten. I used sour cherries in a jar (2 jars) and followed the recipe. I had a hard time getting the lattice to brown so I turned on the broiler for 2 minutes at the end.

Warning- if you are using fresh cherries, add more cornstarch and cook filling on the stovetop before baking. I made the recipe as written and it was completely watery. I had to drain the filling, cook it and refill the pie. No small feat!

Loved it. I made it for a friend too and am waiting for their response. Nice balance of flavors. VERY EASY TO MAKE! I used two and a half cans of cherries. Definitely dotted plenty of butter on it. Took some of the cherry juice to paint the crust and then sprinkled sugar over it. That was the only change I made to the recipe. And of course I used my own crust - with lard and butter.

This turned out amazing. Real cherries were a bit more prep, but totally worth it. I added a base of slivered almonds inside the pie base before I poured in the cherry mix, and it was incredible. Next time I’ll just roll out a sheet top pastry instead of trying to do lattice (which doesn’t work well with steaming hot liquid cherries).

I followed the directions that was posted on here and it came out looking great. Only thing I did was put cinnamon sugar on top

Used canned pitted sour cherries (my bad), subbed tapioca flour for corn starch (5T) and added a splash of vanilla. Oooooo wheee this is GOOD! I love that this recipe calls for 1/2 cup less sugar than most others, certainly not needed.

I will make it again. It was delicious. I used fresh cherries that tasted wonderful in the pie.
