Chocolate Brownie Muffins with Oreo Cookies

Ingredients

This recipe yields 12 servings.

  • 1 (18.25 ounce) package brownie mix (such as Betty Crocker)
  • cup vegetable oil
  • 2 large eggs
  • cup water
  • 12 chocolate sandwich cookies (such as Oreo)

Directions

Follow these easy steps to make these delicious brownie muffins:

  1. Preheat the oven to 350F (175C). Grease 12 muffin cups or line them with paper liners.
  2. In a bowl, combine the brownie mix, vegetable oil, eggs, and water. Stir until the mixture is smooth.
  3. Spoon approximately 1 tablespoon of the batter into each muffin cup.
  4. Place 1 chocolate sandwich cookie (such as Oreo) into each muffin cup, then top with more brownie batter.
  5. Bake in the preheated oven for 20 to 23 minutes. To check for doneness, insert a toothpick into the side of a muffin if it comes out clean, theyre ready!

Cooks Note

If you prefer, you can bake this recipe in a baking pan instead of muffin cups. For a baking pan:

  • Layer batter in the bottom of the pan, arrange the cookies on top, and pour more batter over them.
  • For an 8-inch pan, bake for 38 to 40 minutes.
  • For a 9-inch pan, bake for 34 to 37 minutes.
  • For a 7x11-inch pan, bake for 32 to 35 minutes.

I absolutely adored this recipe! It was incredibly fast and simple to make. We tried it with vanilla Oreos for a zebra brownie variation, and also with the limited edition marshmallow Oreos. We made 16 brownies using cupcake liners, but I prefer mine thinner on both edges to achieve that crispy outer layer and delectable interior. My family definitely enjoyed them, but, as another reviewer mentioned, the Oreos tend to rise to the top, making them look a bit odd and resulting in uneven distribution of Oreos. I am not sure how to fix this issue – perhaps placing the Oreos at the very bottom would help?

Easy and delicious! Just a couple of things to note... If you use 2 eggs, you'll get a cake-like brownie. Also, the Oreos tend to rise up! Our brownies turned out looking like chocolate popovers with cute little hats!

I didn't have vegetable oil on hand, so I substituted coconut oil in this recipe. I greased the pan but skipped using liners, which made it difficult to remove the muffins from the tin as they turned out very soft. I resorted to eating a few with a spoon straight from the tin since they didn't stick but were too delicate to hold their shape. Despite the texture mishap, the muffins were delicious!
