Ghirardelli Ombre Brownie Cake Recipe
Ingredients:
- Cake Layers:
- 1 cup vegetable oil
- cup water
- 2 eggs
- 2 (20 ounce) boxes Ghirardelli Dark Chocolate Brownie Mix
- Ganache:
- 1 cup Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
- 1 cup Ghirardelli Milk Chocolate Chips
- 1 cup Ghirardelli Classic White Chips
- 2 cups heavy whipping cream
- cup light corn syrup
Directions:
- Preheat the oven to 325F (165C). Lightly grease and line three 8-inch round cake pans with parchment paper.
- In a large bowl, combine the vegetable oil, water, and eggs. Stir in the brownie mix until just moistened.
- Divide the batter evenly into the prepared cake pans. Bake for 38 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes completely in their pans before removing them.
- For the ganache: Place each type of chocolate chips into separate bowls.
- Heat the heavy cream in the microwave in 30-second intervals until it just begins to boil. Immediately pour cup of cream over each type of chocolate chips and stir until the chocolate is completely melted.
- Stir in cup of corn syrup into each bowl of chocolate ganache and mix until smooth and shiny.
- Allow the ganache to cool for 2 hours, then whip it with an electric mixer until it becomes fluffy.
- Once the cakes are fully cooled, stack them on a serving plate. Spread a different variety of ganache between each layer of cake.
- Serve chilled for best flavor.

Incredibly decadent with an intense chocolate taste. Unfortunately, my white chocolate ganache didn't thicken as expected, even though I used Ghirardelli white chocolate. I tried to fix it by adding powdered sugar, but it ended up being too sweet. Next time, I'll look for a different recipe for white chocolate ganache. Despite a minor mishap with the bottom tier collapsing, the cake was a hit with all my party guests.

To begin with, I must say that Ghirardelli offers the finest brownie mix out there. However, although the preparation is quite time-consuming, I found the end result to be overly rich. After just a couple of bites, I had reached my limit, and even my husband couldn't finish his thin slice. The white ganache was too thin, and the dark ganache was too thick, despite my careful measurements. I feel disappointed that I spent money on this recipe and I don't plan on making it again.

The idea behind this recipe is fantastic, but the instructions for making the ganaches need improvement. Like many others, I also experienced issues with the consistency of both the white chocolate ganache being too runny and the dark ganache being too thick. A helpful tip would be to gradually add cream, up to 3/4 cup, until you achieve the desired texture for each ganache. It's important to note that when using larger chocolate chips, the actual amount of chocolate in a "cup" may vary, so basing the recipe on weight could lead to more consistent results. After adjusting the amount of cream used for the white chocolate ganache to about 3/8 of a cup on my second attempt, the results were much better. Additionally, using real white chocolate with cocoa butter instead of "white morsels" is crucial for the best outcome. Given that this recipe yields a 3-layer brownie with a rich chocolate "frosting," it's advisable to cut smaller slices to avoid an overwhelming sweetness.

I absolutely loved this recipe! It was bursting with flavor and my entire family enjoyed it. While it did take quite a bit of time to prepare, the end result was definitely worth it. Huge thanks to Ghirardelli for sharing this fantastic recipe. Simply delicious!!!
