No-Bake Peanut Butter Cookies Recipe

Ingredients:

  • 3 cups white sugar
  • cup butter
  • cup milk
  • 1 cups peanut butter
  • teaspoon vanilla extract
  • 4 cups quick-cooking oats

Directions:

Step 1: Gather all the ingredients before you begin. This will make the cooking process smoother.

Step 2: In a medium saucepan, combine the sugar, butter, and milk. Set the pan over medium heat and stir occasionally.

Step 3: Bring the mixture to a rapid boil, then let it boil for exactly 1 minute. Be sure to keep an eye on it to avoid boiling over.

Step 4: Remove the saucepan from the heat and immediately stir in the peanut butter and vanilla extract until smooth and well-combined.

Step 5: Gradually add the oats to the mixture, stirring constantly until everything is evenly mixed and the mixture starts to cool down.

Step 6: If the mixture becomes too full in the pan, feel free to transfer it to a large bowl to continue stirring.

Step 7: Drop the mixture by teaspoonfuls onto a sheet of waxed paper, creating small bite-sized portions.

Step 8: Allow the bites to cool and set for about 30 minutes, or until firm.

Thanks to a few modifications, using 1 cup of Splenda, JIF Simply Peanut Butter, and I Can't Believe It's Not Butter, I was able to recreate my favorite snack. These bars were delicious! I didn't encounter any problems with them being crumbly, unlike with other recipes where the texture was affected by over or undercooking the mixture before adding oats. I find it more convenient to pour the mixture into a square 9x9 or 11x7 dish lined with parchment or wax paper. It's quicker and less messy to cut them into squares rather than making drop cookies.

I tried following the recipe as instructed, but unfortunately, the cookies didn't stay together very well. I decided to salvage them by putting the mixture back in the bowl, adding an egg, and baking it in a pan. To give it a little extra flair, I sprinkled chocolate chips on top during the last minute of baking and then spread them out like icing.
