Cherry Devil's Food Cake Recipe

  • 1 (15.25-ounce) package Devil's food cake mix
  • 1 (12 ounce) can cherry pie filling
  • 3 large eggs
  • cup vegetable oil
  • 1 cup white sugar
  • cup milk
  • 5 tablespoons butter
  • 6 ounces chocolate chips

Directions

  1. Preheat your oven to 350F (175C). Grease a 9x13-inch baking dish and set it aside.
  2. In a large mixing bowl, combine the cake mix, cherry pie filling, eggs, and vegetable oil. Use an electric mixer on low speed to mix for about 30 seconds, just until the ingredients are moistened.
  3. Increase the mixer speed to medium and beat the mixture for another 2 minutes until the batter becomes light and fluffy.
  4. Pour the prepared batter into the greased baking dish, spreading it evenly.
  5. Bake the cake in the preheated oven for 26 to 30 minutes. Check for doneness by inserting a toothpick into the center of the cake - if it comes out clean, the cake is ready.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Meanwhile, in a small saucepan, heat the sugar, milk, and butter over medium heat. Stir constantly and simmer for about 5 minutes until the mixture is smooth and thickened.
  8. Remove the saucepan from the heat and stir in the chocolate chips until they are fully melted and the icing is smooth.
  9. Let the icing cool for about 20 minutes until it thickens to a consistency suitable for pouring.
  10. Once the cake has cooled, poke several holes into the top using a fork or skewer. Pour the cooled chocolate icing over the cake, allowing it to run down the sides.

Recipe Tip

Its critical that the chocolate icing is cool enough to pour easily but not so runny that it pools too much. When done right, the icing should be thick enough that you wont need to spread it.

Additional feedback: I didn't make any holes in the cake, allowing the glaze to stay on the outer layer only. Despite this, the cake remained wonderfully moist and stayed fresh for several days when covered. I shared some slices with others, and received two requests for the recipe! It was a huge success.
