'Nuff Said Maple Bacon Fudge Recipe
Ingredients
- pound smoked maple bacon, cut into -inch pieces
- cup milk
- 2 (1 ounce) squares unsweetened chocolate
- 2 cups white sugar
- 3 tablespoons butter, cut into 1-tablespoon chunks
- 2 tablespoons vanilla extract
Directions
Step 1: Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain on paper towels and set aside.
Step 2: Stir milk and unsweetened chocolate in a large saucepan over low heat until chocolate melts and the mixture is thoroughly combined, about 2 to 3 minutes. Add sugar all at once and whisk until the mixture is smooth, ensuring the sides of the pan are clean.
Step 3: Bring the mixture to a boil, stirring constantly. Continue cooking until a candy thermometer inserted into the center reads 236 to 238 degrees F (110 to 115 degrees C), or until a small amount of the mixture dropped into cold water forms a soft ball. Remove from heat immediately once the correct temperature is reached.
Step 4: Stir in the cooked bacon, then place butter chunks onto the fudge mixture. Pour vanilla extract over the top. Allow the mixture to cool in the pot with the thermometer still in place, ensuring the temperature drops to 110 to 115 degrees F (43 to 46 degrees C). Do not disturb the pot during this cooling period.
Step 5: While the fudge cools, line an 8x8-inch baking dish with aluminum foil and coat with butter.
Step 6: When the fudge reaches 110 to 115 degrees F, stir in the remaining butter and vanilla extract until fully incorporated. Pour the fudge into the prepared baking dish.
Step 7: Refrigerate the fudge for 30 minutes, then score the fudge into desired pieces. Return to the refrigerator for 2 more hours to fully set. Once set, cut into pieces and serve.

Review: Oh no! I was really looking forward to making this fudge, and it sounded delicious. I'm new to making fudge, so I thought maybe I made a mistake. I followed the recipe exactly, and my sugar dissolved perfectly. I used a thermometer and tested for the "thread" and "soft ball" stages, and stirred constantly while it boiled and thickened slowly. But just before it reached 230F, it unexpectedly turned powdery and started looking like cookie crumbs instead of a smooth liquid.
