Grandma's Iron Skillet Apple Pie Recipe

Original recipe (1X) yields 8 servings
- cup butter
- 1 cup brown sugar
- 5 Granny Smith apples, peeled, cored, quartered, and thinly sliced
- 3 (9-inch) refrigerated pre-rolled pie crusts
- 1 cup white sugar, divided
- 2 teaspoons ground cinnamon, divided
- cup white sugar
- 1 tablespoon butter, cut into small chunks
Directions
Step 1: Preheat the oven to 350F (175C).
Step 2: Place cup butter into a 9-inch cast iron skillet. Put the skillet in the preheated oven until the butter is fully melted.
Step 3: Remove the skillet from the oven, then sprinkle the melted butter with brown sugar. Return the skillet to the oven to heat while you prepare the apples.
Step 4: Once the skillet is heated, remove it from the oven. Arrange 1 refrigerated pie crust on top of the brown sugar.
Step 5: Top the pie crust with half of the sliced apples. Sprinkle evenly with cup white sugar and 1 teaspoon ground cinnamon.
Step 6: Place the second pie crust over the apples, and top it with the remaining sliced apples. Again, sprinkle with cup white sugar and 1 teaspoon ground cinnamon.
Step 7: Place the third pie crust on top, then sprinkle with cup white sugar and dot with 1 tablespoon of butter cut into small chunks.
Step 8: Cut 4 slits into the top crust to allow steam to escape during baking.
Step 9: Bake in the preheated oven for approximately 45 minutes, or until the apples are tender and the crust is golden brown.
Step 10: Remove from the oven and serve warm.

This is such an outstanding recipe, thanks so much to the cook who shared it. Over the past 45 years I have probably made hundreds of apple pies but this one is just a treat! I made it as written. The process and the iron Skillet is the key to the finished product being so good. I like cooking with Iron cookware so I was delighted to find this recipe. You may want to adjust the amount of white sugar you put on the apples between the layers. I cut it in half because I just know how we like things. It is super sweet no matter how much you put between the layers because of the butter and brown sugar on the bottom. Just adjust to your own families taste but do make it. It is a wonderful pie.

Fantastic pie!! We made this pie with a homemade gluten free pie crust, dividing a 2 crust pastry into 3 pieces before rolling. It was a perfect amount of crust. We also added raisins per one reviewer, and a tiny amount of allspice and cloves per another reviewer. Used a bit less white sugar in middle layer. We baked it 10 extra minutes. It was seriously amazing! Held its shape even when cut before it was cool. So delicious!! This will definitely be our go to apple pie from now on, but we are talking about using this same 3 crust cast iron skillet method to experiment with other fillings such as mincemeat.

BEST APPLE PIE! Just like Grandmas! Follow the recipe especially for the bottom! If your skillet is seasoned well you shouldn’t stick. I have been making this recipe for years, and it’s most definitely the crowed pleaser! I get requests to make this throughout the entire year! After I lay the apples I put tiny squares of butter between apples and top crust! The only things I do different are I omit center crust, and use an egg yolk on the top crust! I believe it helps keep it from burning! I dunno that’s just how grandma did it!

Also made with half the white sugar but in a larger 12in skillet. Had to double to ten apples. Didn't have enough crust to make the handles, so i just gently stretched to the edge. also I didn't divide the apples evenly between the two layers. It still turned out so good I had two slices. The brown sugar turned into Carmel and was so flavorful!

So, while we liked this pie as is, I have altered the recipe a little bit. 1. I only used 1/2 stick of butter in the skillet, rather than a whole one. 2. I only used 1/3 cup brown sugar with the butter in the skillet. The rest goes in the dry mix. 3. I only use 3/4 cup white sugar, plus a tblsp to sprinkle on the top. 4. I add the following spices: 1/4 tsp allspice, 1/8 tsp ground cloves. 5. I mix the dry ingredients in a bowl and then coat the apple slices before filling the pastry. The cloves really add a little something that people really like, but just can't quite identify, until I tell them the 'secret' ingredient.

Super fun recipe to make. I love the cast iron appeal. The fact that the skillet is hot and you put the first layer on top of the butter brown sugar mixture....my pastry shrank down. No buggy since to more rounds to go. I mixed the spices with the apples and only used 1/2 cup of sugar. We love Ice-cream so the pie was delicious with a slice of cheese a scoop of Vanilla . I use egg was on my pie crust to get the beautiful brown finished look. I also use aluminum foil to protect the pie for the first 40 minutes of baking.

I wasn’t sure what size skillet to use so I went with my 10” skillet, hoping it would work. I used Chef John’s Easy Homemade Pie Crust recipe and some homemade pie filling I had in the freezer from a friend’s apple tree. It was sooooo delicious! Because I already had the pie filling made, I only used the butter and brown sugar on the bottom (I did decrease it to about 3 Tbsp butter melted in the skillet and about 1/2 cup brown sugar sprinkled evenly in that). With the homemade pie crust, I made the lower crust larger to be able to wrap over the smaller one on top and seal over. I’ll be making this for future family get-togethers

Made this pie yesterday as a pre-Thanksgiving dessert. It is now gone. I tried it because so many reviews mentioned their families loving it. Add mine to the list. EASY. DELICIOUS. I think it would be GReAt just as written but I did lower the sugar amounts as others suggested and it was STILL amazing. For those with the bottom sticking to the pan, I did not let the sugar cook in the oven while preparing the apples (as the recipe kinda suggests). I just melted the butter on the stove, added 1/2 c brown sugar, let it melt a little then started the layering. This will be be made again. Probably before the end of the year. Try it!

When I originally made this dish it was much too sweet for me and I was concerned about that amount of butter. So, I cut all the sugar and butter in half, added two additional Granny Smith apples and Food Lion dried cranberries. I also arranged the slices of apples in a spiral on both levels and added 10 minutes to the total baking time. Came out better than I thought. Next time I'm going attempt thicker apple slices.

I made this for a get together yesterday and it was a hit. I did make a couple of changes. I used a 12" skillet so I used 8 apples. Used the same amount of sugar in the recipe since I added apples. I added a tsp of cloves and a quick pout of vanilla. I mixed the sugars, cinnamon and cloves in a bowl then added all the apples and stirred it all together for the filling. For me it was easier to have everything uniformly mixed for each layer. It was a huge hit and will definitely be made again!

I had my doubts the first time I made this but was very pleasantly surprised. I'm diabetic and make this with zero sugar alternatives and it still comes out fantastic.

Made this apple pie for Thanksgiving. Kids (grown adults now) have asked for the same for Christmas dinner. It hit's the mark 100%.
