Hasty Chocolate Pudding Recipe
Ingredients (4 servings):
- cup white sugar
- cup unsweetened cocoa powder
- 3 tablespoons cornstarch
- 2 cups milk
- 2 teaspoons vanilla extract
Directions:
- In a microwave-safe bowl, whisk together the sugar, cocoa powder, and cornstarch.
- Slowly whisk in the milk, a little at a time, ensuring no dry lumps remain in the mixture.
- Place the bowl in the microwave and cook on high for 3 minutes. Stir well.
- Continue to cook and stir the mixture at 1-minute intervals until it becomes shiny and thick, about 2 to 4 minutes.
- Once thickened, stir in the vanilla extract.
- To prevent a skin from forming on the pudding, press a piece of plastic wrap directly onto the surface of the pudding.
- Refrigerate the pudding to chill for at least an hour.
- Serve cold and enjoy!

If you're out of cornstarch, using an equal quantity of either all-purpose or whole wheat flour works just as well. I've even swapped out vanilla extract for 2 teaspoons of bourbon for an extra flavor boost. For a lighter, more mousse-like dessert, let the pudding cool in the fridge for a few hours and then gently mix in a carton of thawed Cool Whip. This turned out to be just as delicious, if not better, than chocolate mousse from fancy restaurants!
