Microwave Hot Fudge Peanut Butter Pudding Recipe

Ingredients
- 1 cup all-purpose flour
- cup white sugar
- cup milk
- cup peanut butter
- 2 tablespoons unsweetened cocoa powder
- 2 teaspoons vegetable oil
- 1 teaspoon vanilla extract
- teaspoon baking powder (or as needed)
- teaspoon salt
- 1 cups hot water
- 1 cup brown sugar
- cup unsweetened cocoa powder
Directions
- In a large bowl, combine the flour, white sugar, milk, peanut butter, 2 tablespoons of cocoa powder, vegetable oil, vanilla extract, baking powder, and salt. Stir until the batter is smooth.
- Transfer the batter into an 8x8-inch microwave-safe dish, spreading it evenly.
- In a separate bowl, mix the hot water, brown sugar, and remaining cup cocoa powder. Stir until the sugar and cocoa powder are dissolved.
- Pour the cocoa mixture over the batter in the dish. Do not stir.
- Microwave the dish on 50% power for 9 minutes.
- After 9 minutes, rotate the dish halfway, then continue microwaving on high for another 6 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
