Mini Pecan Pies Recipe
Ingredients:
- 1 cups pecan halves
- 1 cup white sugar
- 3 large eggs, beaten
- cup light corn syrup
- cup dark corn syrup
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- teaspoon salt
- 18 (3-inch) ready-to-bake pie shells
Directions:
Step 1: Preheat your oven to 350F (175C).
Step 2: Place the pecans in a food processor and pulse until they are coarsely chopped.
Step 3: In a mixing bowl, combine the white sugar, eggs, light corn syrup, dark corn syrup, melted butter, vanilla extract, and salt. Stir until well combined.
Step 4: Gently fold the chopped pecans into the mixture.
Step 5: Spoon approximately cup of the pecan mixture into each mini pie shell.
Step 6: Place the filled pie shells onto a baking sheet and transfer them to the preheated oven.
Step 7: Bake for 25 to 30 minutes, or until the mini pies are slightly browned.
Step 8: Serve the pies warm, or allow them to cool. Once cooled, store them in an airtight for up to one week.
Cooks Note: For the best flavor, I recommend using butter and vanilla extract instead of margarine and vanilla flavoring.
