Almond Milk Pudding
This simple almond milk pudding is creamy, delicious, and made with just a few ingredients. Perfect for a light, dairy-free dessert!
Ingredients
- 2 cups almond milk, divided
- 1 (3.5 ounce) package instant vanilla pudding mix
- 2 teaspoons cornstarch
Directions
Step 1: Pour 1 cup of almond milk into a small saucepan. Add the cornstarch and place the saucepan over medium heat. Stir constantly until the mixture begins to bubble, about 3 to 5 minutes.
Step 2: Remove the saucepan from the heat and continue stirring for another 30 seconds to ensure the mixture thickens properly.
Step 3: In a separate bowl, pour the remaining almond milk and add the instant vanilla pudding mix. Using an electric mixer on low speed, mix for about 1 minute until the pudding thickens to a very firm consistency.
Step 4: Add the cornstarch mixture from the saucepan to the pudding mixture and continue mixing on low speed for another minute to fully incorporate the ingredients.
Step 5: Transfer the pudding into 4 individual serving bowls. You can cover and refrigerate the pudding if you prefer it chilled, or serve immediately for a warm treat.

Here is the revised review: "I made a mistake by adding the cornstarch after the milk had already started heating up on the burner. The cornstarch didn't dissolve properly and I had to strain out the chunks. To fix this, I poured water into a saucepan and mixed in the cornstarch until the water turned a milky white. After heating the mixture until it became a clear slime, I combined it with the rest of the pudding (about 2 tablespoons of the mixture). The final result was a fantastic pudding. I also included some additional trivia to enhance the experience."

The dish turned out delicious! I opted for vanilla instant pudding, but trying it with chocolate would be fantastic!

I tried the Jello Sugar-Free/Fat-Free cheesecake instant pudding packets (2) and followed the instructions. I added some Truvia and a little less than half a cup of almond milk, and it was a hit with my kids as well!
