Best Honeycomb Toffee Candy Recipe
Ingredients
- 1 teaspoon baking soda
- cup white sugar
- 2 tablespoons corn syrup
- 2 tablespoons water
- 1 tablespoon honey
Directions
Step 1: Gather all your ingredients. Line a baking dish with parchment paper, measure the baking soda into a small bowl, and have a heatproof spatula ready. Make sure your candy thermometer is attached to your saucepan.
Step 2: In a saucepan, whisk together the sugar, corn syrup, water, and honey. Attach the candy thermometer to the side of the pan, ensuring it does not touch the bottom. Heat over medium heat, stirring occasionally, until the mixture becomes thinner but still cloudy.
Step 3: Allow the mixture to bubble until it turns clear and the thermometer reaches 300F (149C). At this point, carefully remove the pan from the heat.
Step 4: Quickly whisk in the baking soda until fully incorporated. The mixture will bubble up, so do this gently.
Step 5: Switch to a heatproof spatula and carefully pour the mixture into the prepared baking dish. Avoid spreading or compressing the mixture with the spatula, as this can deflate the bubbles. Let it cool for at least 30 minutes until completely set.
Step 6: Once cooled, lift the candy out of the pan by pulling on the parchment paper. Rap it against the counter gently, then use your fingers to break it into individual pieces.
Recipe Tips
- For bigger bubbles, increase the baking soda to 2 teaspoons, but be aware of a potential aftertaste. Never use baking powder!
- If you dont have corn syrup, golden syrup is a good substitute in equal amounts.
- To check the syrup temperature without a candy thermometer, drop a bit of the molten syrup into cold water. If it turns into hard candy, it's ready. However, a thermometer is the most accurate method.

Fantastic texture! Super simple to achieve. I added 1 teaspoon plus a pinch more of baking soda and loved the perfect amount of bubbles. Although I used a candy thermometer, I only reached 250 degrees before the syrup started to brown, so I removed it from the heat.

I decided to do a trial run of this recipe, as the ingredients are easily accessible and affordable. I was planning to create baked goodie tins for Christmas and the outcome was fantastic.
