Dark Chocolate Almond Rocks Recipe

Cook Time: 8 minutes

Ingredients:

  • cup almonds, crushed into chunks
  • 7 ounces dark chocolate chips (50% cacao)

Directions:

Step 1: Spread almonds in a large skillet. Toast over medium heat, stirring occasionally, until the almonds start to brown, about 3 to 5 minutes. Once toasted, transfer the almonds to a bowl and set aside.

Step 2: In a double boiler, melt the chocolate by placing it in the top pan over simmering water. Stir frequently and scrape down the sides of the bowl to prevent the chocolate from burning. This should take about 5 minutes. Once melted, remove from heat.

Step 3: Pour the toasted almonds into the melted chocolate and stir gently until the almonds are evenly coated with the chocolate.

Step 4: Using a spoon, drop dollops of the chocolate-almond mixture onto a plate lined with wax paper. Be sure to space them out evenly. Once finished, place the plate in the refrigerator and chill for about 10 minutes or until the chocolate is fully set.

Recipe Tip: If you prefer, you can pour the chocolate-almond mixture into silicone molds instead of spooning them out onto wax paper for a different shape and presentation.

Doesn't get much easier than this. I sprayed an empty ice cube tray with cooking spray. Easy removal - twist and pop out. I would think a mini muffin tin would also work, too. Thanks for the recipe!

I mix raisins with walnuts, or just walnuts. I mix rice krispies - all with milk chocolate sometimes dark chocolate. I put coconut in oven for a few minutes (be careful it goes fast) then mix it with dark chocolate and put an almond on top.

I used 1/4c walnuts, 1/4c raisins, and added a few shakes of salt--VERY good. However, as I'm going for more of a "chocolate-covered" type of treat, I will try it again with half the chocolate. Oh! I also just put the chocolate chips (minis) in a glass bowl in the microwave--30 seconds on high, stir, 30 seconds on high, then stir until completely melted.

I add a twist by dropping the dark chocolate onto parchment paper into half dollar size medallions. I then sprinkle chopped pistachios, chopped dried apricots, raisins, and chopped pecans on top before the chocolate sets up. The variations are endless.

Wow, what a good recipe - so easy and delicious. I didn't have the dark chocolate required so I used what I had, which was a mix of pure chocolate baking squares: bittersweet, semi-sweet and unsweetened. I waited a few minutes for the mixture to cool slightly so that they would keep a nice shape on the waxed paper. The only change I'd make next time is to increase the ratio of almonds to chocolate as the last few flattened out more because they had less nuts in them. They made a nice hostess gift ; I will surely make these again.

Easy peasy. I added a touch of almond extract while heating my chocolate over a double boiler. Poured into silicone molds as suggested in the main recipe. So awesome!!! Tasted decadent as if bought in a high end candy store!! Thank you.
