Eagle Brand Lemon Cream Pie Recipe
Ingredients:
- 3 large egg yolks
- 1 (14 ounce) can Eagle Brand Sweetened Condensed Milk
- cup Santa Cruz Organic Pure Lemon Juice
- 1 (9 inch) prepared graham cracker or baked pie crust
- Frozen whipped topping, thawed or whipped cream
- teaspoon grated lemon peel (optional)
Directions:
Step 1: Preheat the oven to 325F (165C).
Step 2: Place the egg yolks in a large bowl. Beat with an electric mixer until smooth and creamy.
Step 3: Add the sweetened condensed milk and lemon juice to the bowl. Beat until well combined.
Step 4: Pour the filling into the prepared pie crust and spread it evenly.
Step 5: Bake in the preheated oven for 30 to 35 minutes, or until the filling is set.
Step 6: Remove the pie from the oven and allow it to cool at room temperature for 1 hour.
Step 7: Once cooled, transfer the pie to the refrigerator and chill for at least 3 hours to firm up.
Step 8: Before serving, spread whipped topping or whipped cream over the pie.
Step 9: Garnish with grated lemon peel, if desired, and serve chilled.

A delicious lemon version of Key Lime Pie and just as delicious. Just a couple of tips – beat your egg yolks until thick and lemon-colored. Add 1-1/2 tsp. of grated zest (I also used fresh lemon juice). Baking this for 30-35 minutes is not necessary and may even be too long - 15 minutes is just fine. I also used my own graham cracker crust: 1-1/4 c. graham cracker crumbs, 2 T. sugar and 5 T. butter, melted. Pat into pie dish and bake at 350 degrees, 7-9 minutes.

I made this with fresh lemon juice and the zest of 1 lemon and made my crust with vanilla wafers and ginger snaps. Baked for 20mins and top with fresh whipped cream once completely cooled and refrigerated. My family loves this pie!!

I squeezed and added 1 cup of fresh lemon juice strained and lemon zest from all the squeezed lemons. I whipped the egg whites, 1/2 tsp of cream of tar tar and added sugar (about 1/2 cup but you might want more depending on individual). Whipped til stiff and peaked. Spread on top of pie and baked according to recipe.

I used a 9” deep dish pie pan so I doubled the recipe and cooked it a little longer (8-10 min). And I only use fresh squeezed lemon juice. It was tart but sweet. Just right for us.

I made this to use up a can of sweetened condensed milk and we all loved it even more than it's key lime pie cousin! I used a store-bought graham cracker crust and fresh lemons with about two teaspoons of zest. I read a few reviews and only baked about 20 min. Super easy, super good. In a world of easy key lime pies, this tangy silky lemon pie stands out!

This is a favorite family recipe. We use fresh lemons include zest and top with meringue.

Have been making it for many years. One of my favorites. So easy. I use egg whites and make meringue with a quarter cup of sugar then bake 15 minutes @ 325

Been making this since I was a kid. Still prefer it with meringue--so easy to make. I should have remembered to double it--even though it is just for my husband and me. 20 minutes top to bake.

Easy to make and went over well for dessert. I used the homemade graham cracker crust that another reviewer mentions, and I used mostly fresh lemon juice with a little from the bottle to top off to the amount that I needed. Will make it again most likely!

I'll make my next one where you actually use crushed graham crackers and butter to make the crust and beat the egg whites to make the meringue. It's been more than 20yrs since I've attempted to make any desserts. I'll keep you posted!

I’ve been making this pie for 45 years. It’s my son’s and my very favorite. I triple the recipe and make 2 10” pies. Following the recipe for one pie is not enough.
