The Best Gluten Free Brownies Ever...Seriously Recipe
Ingredients
- cup chopped walnuts (optional)
- 6 ounces semisweet chocolate chips
- 1 teaspoon unsweetened cocoa powder
- cup tapioca flour
- cup sorghum flour
- cup teff flour
- cup unsweetened cocoa powder
- 1 teaspoon xanthan gum
- 1 pinch salt
- cup butter, room temperature
- 1 cup white sugar
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
Directions
- Preheat your oven to 350F (175C). Grease a 9x9-inch baking pan and set aside.
- In a small bowl, toss the chopped walnuts and chocolate chips with 1 teaspoon of cocoa powder until well coated. Set aside.
- In a separate bowl, combine the tapioca flour, sorghum flour, teff flour, cup cocoa powder, xanthan gum, and a pinch of salt. Stir until well mixed.
- In a large bowl, beat the butter and sugar together until creamy and light in color.
- Add the beaten eggs and vanilla extract to the butter mixture, stirring to combine.
- Gradually add the flour mixture to the butter mixture, mixing until fully incorporated.
- Fold in the prepared walnuts and chocolate chips until evenly distributed throughout the batter.
- Spread the batter evenly into the prepared baking pan.
- Bake in the preheated oven for about 25 minutes, or until the top is dry and the edges begin to pull away from the sides of the pan.
- Allow the dessert to cool before serving and enjoy!

I experimented with this recipe by using 3/4 cup of gluten-free flour blend without any added gums, and I really enjoyed the brownies. I'm not a fan of xanthan gum, so I decided to skip it after reading reviews mentioning that the batter could become "glob-like" or "sticky" due to the gum. I baked them in an 8x8 square dish and they cooked evenly in around 30 minutes. The end result was a bit crumbly, likely because of the lack of binders. Despite this, the taste was fantastic, just like a classic brownie. Next time, I may try adding some arrowroot or sweet rice flour for better binding. I will definitely be making this recipe again.
