Ingredients
- 1 (3-ounce) package lemon-flavored gelatin, such as Jell-O
- 1 1/3 cups boiling water
- 1 (2-layer package) lemon cake mix
- 3 large eggs
- 2/3 cups vegetable oil
- 1 1/2 cups powdered sugar
- 1/4 cup lemon juice
Directions
- Preheat your oven to 350F (175C). Grease and flour a 9x13-inch baking pan.
- In a large bowl, stir the lemon gelatin into the boiling water. Let it cool to room temperature, about 30 minutes.
- Once the gelatin has cooled, add the cake mix, eggs, and vegetable oil to the bowl. Beat the mixture with an electric mixer on medium speed for 2 minutes, until smooth.
- Spread the batter evenly into the prepared baking pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cake is baking, whisk together the powdered sugar and lemon juice in a small bowl to create the glaze.
- Remove the cake from the oven and place it on a wire rack. Using a chopstick or straw, poke holes about 1 inch apart all over the cake.
