Alabama-Style White Barbecue Sauce Recipe
Ingredients
This recipe was originally designed for 6 servings. Ingredient quantities will adjust automatically, though cooking times and steps remain consistent. Note that scaling may affect results slightly.
- 2 cups mayonnaise
- cup apple cider vinegar
- cup prepared extra-hot horseradish
- 2 tablespoons fresh lemon juice
- 2 teaspoons prepared yellow mustard
- 1 teaspoons freshly ground black pepper
- 1 teaspoon kosher salt
- teaspoon cayenne pepper
- teaspoon garlic powder
Directions
Follow these steps to create a creamy, zesty sauce:
- Step 1: Gather all ingredients and prepare your workspace.
- Step 2: In a medium mixing bowl, combine mayonnaise, apple cider vinegar, horseradish, lemon juice, and yellow mustard.
- Step 3: Add black pepper, kosher salt, cayenne pepper, and garlic powder to the mixture.
- Step 4: Whisk all ingredients thoroughly until the sauce becomes smooth and creamy.
- Step 5: Cover the bowl and refrigerate until ready to serve, allowing the flavors to meld together.
- Step 6: Serve as a table sauce, salad dressing, or marinade for meats and vegetables.
Chef's Notes
This versatile sauce works wonderfully as a complement to barbecued meats, potato salads, coleslaw, or grilled vegetables. For basting chicken, ribs, or pulled pork, brush two to three layers on each side toward the end of cooking over indirect heat. The sauce caramelizes beautifully.

I made five BBQ sauces today to get a head start on the 40 pound whole hog I will be fixing for Thanksgiving and I've got to say that this one was the best hands down. None of the sauces I made were what I would call a traditional BBQ sauce and this one really stood out in terms of flavor. It was great right out of the mixing bowl but I am anxious to see how good it got after it sat a few days. This would be great on brisket or roast beef!

I made this sauce, used a fresh garlic clove in place of the powder and added a tablespoon of soy sauce for a little unami. After mixing I let it 'mature, ripen' overnight in the frig. I got to say this is probably the best dressing/sauce I ever made. I put this sh#@ on everything, into everything as a flavor booster, and I mean everything. cooked potatoes, grilled chicken, burgers, tuna salad, green salads, sandwiches...everything, anything savory. It's an excellent sauce. Like I said, I put this on everything. bp

Wow! Great Alabama White Sauce. I made 1/2 a batth in case I didn't like it. I learned two things...1) a couple reviewers said to judge the taste the next day. They were spot on. There is a big difference in flavor. 2) I used half the amount of vinegar called for. For 1/2 a batch I used 2 tablespoons. Wait and taste next day to compare. This was a matter of taste for me. This sauce is good on so many things. I may even try it on a flip flop. Thanks for the recipe!

Delicious!! Tip: make it the night before you are planning on eating. I made this, tasted it and almost threw it out! My husband suggested letting it sit overnight and trying it the next day. I am really happy I listened to him! We could literally drink this sauce it was so good!

Very good base. It needs less vinegar in my opinion and more cayenne pepper. Also added extra garlic and smoked paprika. Chef John you rock!!!!!

Great sauce. Had never had it before. I made it just the way it said except I substituted wasabi paste for the hot horseradish. Worked great. I also added a bit extra garlic powder

I halved the vinegar per suggestions and this is very good BUT it reminds me of another recipe w/8 tsp Mayo, 4 TBSP rice vinegar, 2 tsp soy sauce 1 tsp coriander, 1tsp canola oil. This is from Wolfgang Puck’s Vietnamese Chicken served w/fresh chopped mint. Try them both! The second one isn’t as thick but really great with roasted chicken. I immediately was reminded of it after tasting this one. Can’t find it online- I had it saved in my cookbooks.

I'm giving this three stars on my first attempt. I followed the directions exactly. I love the taste of it right out of the bowl period but as the other said wait until the next day to taste it period so I did that. The vinegar hits you like a ton of bricks! If you love vinegar this recipe is for you. if you want to tone down the vinegar so you can taste all the other wonderful flavors do half the vinegar and the other half apple juice

I substituted Worcestershire sauce for some of the vinegar and there was still way too much vinegar. Next time I'll cut it in half. Also omitted the salt but I can see how some people would like it a bit salty.

I didn't have a lemon so I used the only lime I had. I couldn't find "extra hot" horseradish so I made do with what Food Lion had. Next year it'll be home grown. That being said, I'm excited for Memorial Day weekend when I'm doing about 20 pounds of pulled pork. Freshly made this has a really good flavor that should get better by Saturday. With the ratio of spice, this is actually milder than I thought it would be but that means more people will enjoy it. There's a little pleasant heat at the end that stays awhile. I will make this again.

It is great! I made as written. My son, also a "Q" aficionado, loved it. It is too hot for others in my family. I'll consider using half the red pepper so my wife and the ladies will like it, I can add red pepper to mine.

Way too much vinegar. It was all I could taste. Use 2-3 taste tops or find another recipe. The whole batch had to be dumped. Confused on how this recipe has anywhere close to 4.5 stars.

So disappointed with this recipe. Absolutely off!! The amount of vinegar is way too much, but sadly we realized after making it. We tried to fix it with some soy sauce and some sugar, but didn’t work. We can’t believe how this recipe got such high ratings, and that was the reason why we chose this recipe. My husband said maybe using it as a salad dressing for potato salad, but I don’t know. What a waste of ingredients and time. Please look somewhere else for an Alabama White BBQ sauce recipe.

I liked it very much as written. I think its hilarious (not to mention silly) that the reviewer that gave it 2 stars for being bland, was following the advice of a 3 star reviewer, and cut the vinegar in half (hmm🤔). And that 3 star reviewer who thought it was too salty, omitted the Salt, but replaced half of the vinegar with worcestershire sauce! Really? I wonder why they didn't like it? 😉

Born and raised Alabama girl here. I followed the recipe, taking one suggestion from the reviewers to reduce the vinegar by half. It didn't taste anything like the delicious sauce I have had before. I heavily coated chicken legs and thighs in it and baked. It was surprisingly bland on the chicken and didn't have a kick. Neither my husband nor I liked it.

I made it exactly as the recipe states and have two bottles of sauce. It has become my youngest son’s favorite sauce!
