Ingredients

- Cooking spray
- 16 ounces egg substitute
- 1 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
- 1 cup diced bell peppers
- 1 cup shredded Cheddar cheese
- Salt and ground black pepper to taste
Directions
- Preheat the oven to 350F (175C). Spray 12 muffin cups with cooking spray.
- In a mixing bowl, combine the egg substitute, spinach, bell peppers, Cheddar cheese, salt, and black pepper. Stir until everything is well combined.
- Spoon the mixture evenly into the prepared muffin cups, filling each about full.
- Bake in the preheated oven for approximately 25 minutes, or until the tops of the muffins turn golden brown.
