Ingredients

  • 16 ounces egg substitute
  • 1 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
  • 1 cup diced bell peppers
  • 1 cup shredded Cheddar cheese
  • Salt and ground black pepper to taste

Directions

  1. Preheat the oven to 350F (175C). Spray 12 muffin cups with cooking spray.
  2. In a mixing bowl, combine the egg substitute, spinach, bell peppers, Cheddar cheese, salt, and black pepper. Stir until everything is well combined.
  3. Spoon the mixture evenly into the prepared muffin cups, filling each about full.
  4. Bake in the preheated oven for approximately 25 minutes, or until the tops of the muffins turn golden brown.
