Apple & Cranberry Oatmeal

Ingredients

This recipe yields 2 servings.

  • 2 cups water
  • 1 apple, cored and diced
  • cup fresh cranberries
  • 1 cup quick-cooking oats
  • cup brown sugar
  • teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • 1 pinch salt
  • cup chopped walnuts

Directions

  1. In a medium-sized pot, combine water, diced apple, and fresh cranberries. Bring the mixture to a boil over high heat.
  2. Once the water is boiling, cook for about 5 minutes, until the cranberries have burst and the apple has softened.
  3. Reduce the heat to medium and add oats, brown sugar, cinnamon, nutmeg, and a pinch of salt to the pot. Stir well to combine.
  4. Continue cooking, stirring occasionally, for 2 to 3 minutes until the oatmeal thickens and the liquid is absorbed.
  5. Remove from heat and top with chopped walnuts before serving.
