10-Minute Rice Cakes Recipe

  • cup cooked white rice
  • 1 egg
  • 1 tablespoon chopped fresh basil (Optional)
  • 1 teaspoon milk
  • Salt and ground black pepper to taste
  • 1 teaspoons butter

Directions

  1. In a bowl, mix together the rice, egg, basil (if using), milk, salt, and pepper until well combined.
  2. Heat the butter in a skillet over medium heat until melted.
  3. Scoop the rice mixture into the skillet, dividing it into two equal portions.
  4. Cook each portion until browned on the bottom, about 3 minutes.
  5. Carefully flip each portion and cook the other side until browned, about 2 more minutes.

Recipe Tip

You can substitute brown rice for white rice if preferred.

What an interesting recipe! I enjoyed it as a novelty, having never had anything like it before. It's a good use of leftover rice, but I don't know exactly where it fits in the grand scheme of things. I will make it again, but I don't know when. I probably will omit the pepper and basil and turn it into a sweet dish as another reviewer suggested.

Great, quick recipe. I subbed applesauce for the egg and soy milk for dairy milk, and used very light layer of spray canola oil vs butter all to cut calories and avoid dairy. They tasted great!

I usually give my leftover rice to the birds however this Recipe is Exceptional! I've found it's delicious with maple syrup along with whipped cream. I would however omit the Pepper and Basil if you were to try that.

This could be a good recipe, except when I double the portion, 2 eggs are too much. I recommend 1 egg for 1 cup of rice.
