Ingredients

  • Cooking spray
  • 1 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 ripe bananas, mashed
  • cup white sugar
  • cup melted butter
  • 1 egg, beaten

Directions

Step 1: Preheat the oven to 375F (190C). Grease 2 mini muffin tins with cooking spray.

Step 2: In a mixing bowl, combine the flour, baking powder, and baking soda.

Step 3: In a separate bowl, blend the mashed bananas, white sugar, melted butter, and the beaten egg until smooth.

Step 4: Add the banana mixture to the dry ingredients and stir the batter well to combine.

Step 5: Using a spoon, scoop the batter into the prepared muffin cups, filling each about two-thirds full.

Step 6: Place the muffin tins in the preheated oven and bake for about 15 minutes, or until the tops spring back when lightly pressed.

Step 7: Allow the muffins to cool in the tins for 5 minutes before transferring them to a wire rack to cool completely.
