Breakfast Chilaquiles Recipe

Ingredients
- 1 teaspoons olive oil
- 2 corn tortillas, cut into small squares
- 5 eggs
- Salt and ground black pepper to taste
- cup shredded Cheddar cheese
- (14 ounce) can enchilada sauce (such as Old El Paso)
Directions
Step 1: Heat olive oil in a large skillet over medium heat.
Step 2: Add the tortilla squares to the skillet. Cook and stir until crispy, about 5 minutes.
Step 3: In a bowl, whisk together eggs, salt, and pepper. Stir in the shredded Cheddar cheese.
Step 4: Pour the egg and cheese mixture into the skillet. Cook and stir until the eggs are firm, about 5 minutes.
Step 5: Pour the enchilada sauce on top of the eggs and tortilla mixture. Serve immediately.
