Buffalo Chicken Omelet

Ingredients
- 2 ounces cream cheese
- 1 tablespoon crumbled blue cheese
- 1 tablespoon buffalo sauce (optional)
- 1 ounce cubed, cooked chicken
- 1 tablespoons ranch dressing
- 3 eggs
- Nonstick cooking spray

Directions
- In a microwave-safe bowl, combine the cream cheese, blue cheese, and 1 tablespoon of buffalo sauce (if using). Microwave on high for 1 minute, then stir. Continue microwaving in 15-second intervals, stirring each time, until the mixture is creamy and smooth. Set aside to cool for 5 minutes.
- Mix in the cooked chicken and ranch dressing to the cream cheese mixture.
- In a separate bowl, whip the eggs until they are light and lemon-colored.
- Heat a large skillet over medium-high heat. Lightly coat with nonstick cooking spray.
