Buffalo Chicken Omelet

Ingredients

  • 2 ounces cream cheese
  • 1 tablespoon crumbled blue cheese
  • 1 tablespoon buffalo sauce (optional)
  • 1 ounce cubed, cooked chicken
  • 1 tablespoons ranch dressing
  • 3 eggs
  • Nonstick cooking spray

Directions

  1. In a microwave-safe bowl, combine the cream cheese, blue cheese, and 1 tablespoon of buffalo sauce (if using). Microwave on high for 1 minute, then stir. Continue microwaving in 15-second intervals, stirring each time, until the mixture is creamy and smooth. Set aside to cool for 5 minutes.
  2. Mix in the cooked chicken and ranch dressing to the cream cheese mixture.
  3. In a separate bowl, whip the eggs until they are light and lemon-colored.
  4. Heat a large skillet over medium-high heat. Lightly coat with nonstick cooking spray.
