Chef John's Dutch Babies Recipe

Cook Time: 20 minutes

Ingredients:

  • 3 large eggs, room temperature
  • cup milk, room temperature
  • cup all-purpose flour, packed
  • teaspoon vanilla extract
  • teaspoon salt
  • 3 tablespoons clarified butter
  • 1 tablespoon butter
  • Meyer lemon, juiced
  • 1 tablespoon confectioners' sugar, or to taste

Directions:

  1. Preheat the oven to 425F (220C).
  2. In a blender, combine eggs, milk, flour, vanilla, and salt. Blend until the batter is smooth.
  3. Place a 10-inch cast iron skillet over high heat and melt the clarified butter until it starts to bubble.
  4. Pour the prepared batter into the center of the skillet.
  5. Bake in the preheated oven for 20-25 minutes, or until the pancake is puffed and golden brown.
  6. Once baked, brush the top with 1 tablespoon of butter, drizzle with Meyer lemon juice, and dust with confectioners' sugar.

Amazing!! I didn't clarify the butter. I preheated the oven at 475 with my pan in there. When the pan was hot I put the butter into my pan in the oven and let it melt and heat up. I turned the oven down to 425 poured the batter into the preheated pan with the melted butter and let it cooked for 20 min. Perfection it came out looking amazing and deflates in about 3 minutes :( but the taste is unique and super good. I will be making this again and again. Next time I am going to try a savory one.

We loved it, but we used a hand mixer instead of a blender. We used slightly warmed ingredients, mixing the eggs first then adding milk, vanilla, salt, and finally flour. Melted regular butter in the skillet while the oven preheated. Puffed up nice and high after 20 minutes! Perfect with the lemon and butter on top and some sprinkles of powdered sugar.

Great, tasty, and simple. We love our is with some homemade strawberry syrup. A tip to get it extra poofy: heat up your oven to 500 with the cast-iron pan inside, melt the butter in the hot oven, and once you pour your batter inside, turn down the heat to 425.

I am not sure how anyone would fail at making this dish. I substituted vanilla abstract for a tablespoon of sugar. The cast iron skillet was too big, and I didn't clarify the butter. I didn't have any powdered sugar. I followed the recipe, and I added blueberries. After baking I brushed it with butter and drizzled maple syrup, which turned out delicious. Fast and easy recipe. I loved it and had to stop myself from eating the whole thing.

Mmmmmm delicious! I wanted to use up some sourdough starter instead of just discarding it completely, so I used that as the flour component of my recipe. I also used heavy cream instead of milk since that’s what I had on hand, and I heated the butter in the cast iron skillet as the oven preheated. I didn’t get the same amount of puffiness as Chef John, but it came out super custardy! Will definitely make again, and will try the recipe without my impromptu mods.

Melted 3 TBSP of butter in skillet while oven warmed at 425. Blended ingredients and poured in and baked for 20 min. Perfect. Half is perfect. Did a quarter with cinnamon/sugar and a quarter with Nutella and strawberry.

Delicious and they look very impressive! My son said that it was like eating out at a fancy breakfast brunch! The only thing I want to comment on is that I baken them for a lot less time. Around 15 min. Also, instead of Meyer lemon juice, I have used tangerine juice (I have a tree in my backyard) and its amazing!

I used gluten free flour and almond milk in the same amounts. I also added some sliced apples and cinnamon in the pan before the batter- I like a sweet Dutch baby!

My husband Jack tried this recipe and followed the suggestion of one of the reviewers to use a muffin tin. They turned out wonderful and the grandkids ask for them every time we visit. We serve them with Nutella, bananas, warmed apple pie filling along with the traditional strawberry style. DELICIOUS!

I’ve made this a few different ways and decided to settle for the rule of thumb I’ve heard, 1/4 cup flour + 1/4 cup milk for each egg used. I’ve tried this with room temperature eggs and milk and I’ve tried it with them straight from the fridge, and I haven’t really noticed a difference. I’ve even tried the suggestion of making it the night before and refrigerating it until ready to bake (some say that it makes it taste less eggy and puffs up better), but again, no real difference. I only have a toaster oven and can’t fit cast iron in there, so I’ve used 8x8 glass or metal. Not doing glass again after realizing that it’s not supposed to go in toaster ovens and may crack. But the metal seems to work better anyhow. Only time I really messed this up was when I had this crazy idea to blend in some strawberries with the batter. Do NOT ever try that. Ugh. But my favorite is with cinnamon and nutmeg blended in and topped with sautéed apples. However I wind up making it, it has become our Saturday breakfast staple and we all love it! Especially because it feels like you’re eating dessert even though there’s barely any sugar added!

Love this recipe! I caramelized apple slices in butter, allspice, cinnamon and sugar then added the Dutch baby mix to them. It came out great !

Came back to this version after making a couple others and it not working out. Packing the flour, having the eggs and milk at room temp, and the pan VERY hot on the stovetop first were *KEY*. Most perfect delicious on yet!

This is my new favorite for German pancakes. I didn't use lemon juice--but will try it when our tree has ripe lemons. Still, the texture and flavor was awesome when served with powdered sugar, whipped cream, and blueberries.

Germans were/are “Deutsch”…. As in Pennsylvania Deutsch…. Way back when….many Yanks were not quite educated enough to know Deutsch wasn’t Dutch. Easy mistake. Great recipe. Have had it several times!
