Cheese Omelette Recipe
Ingredients
- 3 large eggs
- 1 tablespoon milk (or as needed)
- Salt and freshly ground white pepper to taste
- 2 tablespoons butter
- cup shredded Emmentaler cheese
Directions
- Whisk the eggs in a bowl, adding milk and seasoning with salt and white pepper. Whisk until the egg mixture becomes foamy, which should take about 2 to 3 minutes.
- Melt the butter in a small nonstick skillet over medium-low heat.
- Pour the egg mixture into the skillet, swirling it so the bottom is evenly covered. Let it cook until the edges begin to set, about 1 minute.
- Use a spatula to lift the edges of the omelette, tilting the skillet so the uncooked egg flows to the bottom to cook. Repeat this until the egg is almost fully set and no visible liquid remains.
- Carefully flip the omelette and cook for another 30 seconds to 1 minute to ensure it is heated through.
- Sprinkle the shredded Emmentaler cheese down the center of the omelette and fold it in half. Let it cook for about 20 seconds or until the cheese has melted.
- Slide the omelette onto a plate and serve hot.
Cook's Note
You can substitute any cheese you like, though Emmentaler cheese is particularly delicious in this recipe.

Easy peasy eggs over cheesy. This was simple, fast, and filling. I used a medium cheddar cheese for mine. The only trouble I had was when I was trying to lift the edge so the uncooked egg could run beneath and it tore because I lifted the edge a little too much trying to get more tilt so the egg would run easier, so my omelet wasn't pretty. I tried to fix it with the uncooked egg, but when I went to flip it, it was all over. So scrambled egg with cheese it is. I formed it back into an omelet shape the best I could. Do use a large bowl to whisk the eggs as I used a regular cereal bowl and while it worked, I had to be cautious while whisking, and a larger bowl would have just been much easier. I'd also pull out the hand mixer instead of hand whisking for those few minutes. Any cheese you like will work in this and this is easy to customize to your preference by adding whatever filling you'd like.

I like butter but this was just too much. I used black pepper instead of white and that is the only change I made. Hubs loved this cheese with egg. What I think would make this even better is to add some sliced mushrooms and baby spinach. Good recipe but I recommend cutting the butter in half. As written this was very oily.

Very good and I will make it again. You could add anything in addition to cheese like bacon or broccoli!

Quite easy. Just the butter is too much. I added Chilli and tomato to sauce before eating. It is nice.
