Brookie Pancakes Recipe

Ingredients

  • Pancakes:
    • 1 cup all-purpose flour
    • 2 tablespoons white sugar
    • 1 teaspoon baking powder
    • teaspoon baking soda
    • teaspoon salt
    • 1 cup buttermilk
    • 1 egg, beaten
    • 2 tablespoons butter, melted
    • 1 teaspoon vanilla extract
    • cup semisweet chocolate chips
  • Brownie Swirl:
    • 1 (18.25 ounce) package brownie mix (such as Betty Crocker)
    • cup vegetable oil
    • 2 eggs
    • cup water

Directions

Step 1: Preheat the oven to 350F (175C). Line a 9-inch baking pan with parchment paper, then grease it with cooking spray.

Step 2: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Step 3: In a small bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until the egg is well broken up.

Step 4: Add the wet ingredients to the dry ingredients and stir gently until just combined. Be careful not to overmix.

Step 5: Fold the chocolate chips into the batter. Let the pancake batter rest for 5 minutes while you prepare the brownie batter.

Step 6: In a large bowl, combine the brownie mix, vegetable oil, eggs, and water. Whisk until smooth.

Step 7: Pour about cup of the brownie batter into a squeeze bottle, pastry bag with a small round tip, or large resealable plastic bag (with the corner snipped off). Set aside the remaining brownie batter.

Step 8: Heat a large nonstick skillet over medium-low heat. Once heated, drop 1/3 cup of pancake batter into the skillet, spreading it evenly by gently shaking the pan.

Step 9: Drop five nickel-size dollops of brownie batter over the pancake. Use a skewer or knife to swirl the brownie batter into the pancake batter.

Step 10: Cook the pancake for 2 to 3 minutes, or until the edges begin to dry. Flip and cook the other side for 1 to 2 minutes until fully set.

Step 11: Repeat the process with the remaining pancake and brownie batters.

Step 12: Pour the remaining brownie batter into the prepared 9-inch pan.

Step 13: Bake in the preheated oven for 28 to 30 minutes or until a toothpick inserted into the center comes out clean. Allow the brownies to cool on a wire rack before slicing and serving.
