Avocado Breakfast Sandwich Recipe

Cook Time: 6 minutes

Ingredients

  • 1 tablespoon olive oil
  • 2 large eggs
  • Salt and ground black pepper to taste
  • 1 tablespoon butter, softened
  • 2 slices Italian bread
  • 1 ounce Swiss cheese, sliced
  • 1 ounce Cheddar cheese, sliced
  • ripe avocado, sliced

Directions

Step 1: Gather all ingredients before starting.

Step 2: Heat olive oil in a skillet over medium heat.

Step 3: Crack the eggs into the skillet and cook for 1 to 2 minutes until the whites begin to set.

Step 4: Flip the eggs and continue cooking for an additional 2 to 5 minutes, depending on how well-done you like your eggs.

Step 5: Once cooked, transfer the eggs to a plate and season them with salt and pepper to taste.

Step 6: Spread butter onto one side of each slice of bread.

Step 7: Heat another skillet over medium heat. Place the bread slices in the skillet, buttered side down.

Step 8: Quickly layer the Swiss cheese, followed by one fried egg, Cheddar cheese, another fried egg, avocado slices, and the remaining slice of bread, butter-side up.

Step 9: Carefully flip the sandwich to grill the other side until golden brown, which should take about 3 to 4 minutes.

Step 10: Remove the sandwich from the skillet, cut it in half, and serve immediately.

Cook's Note

If youd like to make two sandwiches, simply double the ingredients. This would require one full avocado instead of half. For avocado lovers, feel free to use a whole avocado on just one sandwich!

You can substitute sourdough bread for Italian bread if preferred. If you want a different cheese option, American cheese can replace Cheddar cheese.

Delicious!! Try using Sriracha salt, it gives the sandwich a hint of spice and garlic. I doused it in hot sauce but it is indulgently delicious as written. There is a slight discrepancy in step three regarding the bread. Regardless, hindsight taught me that next time I will put both slices of bread -butter side up-in the same pan I used to cook the egg (without wiping it out). Then, I'll flip one over, layer the ingredients and top with the other bread slice, butter side up. Then flip the whole sandwich. Because the sides that weren't toasted were soggy. Thank you for the recipe.

The recipe is great but I made a couple changes for our tastes. I changed to only 1 egg and I added a strip of thick bacon cut in half so there were 2 rows of bacon. When removing the fried egg from the pan I placed it on the cooked bacon so it was easy to pickup and put on top of the Swiss cheese. Delicious breakfast and so easy to make.

Very good sandwich! Loved it! Next time, I'll try it without grilling everything except the eggs. And using mayo to spread on the bread. Maybe that will bring out the avocado flavor more.

I used 2 slices of marble rye bread and the cheese I had on hand Monterey Jack and Vermont sharp cheddar. I fried the eggs on a griddle over my stove using my little veg oil then layered the buttered bread and layered egg, cheese and avocado. It was delicious!

This recipe is very versatile, I added bacon but sausage would be good. Also gave people the option of cheddar instead of swiss

Will have hubby make again for sure. You don't need all the egg. We used 3 eggs which was plenty. Next time we'll try some bacon & only use 2 eggs. We didn't have Swiss cheese so used Gruyere which I think I'd stick with now with the Cheddar cheese. Hubby did say he'll mash the avocado though because with it sliced it slid all over trying to come out from inside the bread.

I made these as open face sandwiches and topped it with halved grape tomatoes then top with balsamic glaze. Yummy!!

I made it a "Three Cheese" Egg and Avocado Sandwich: I just added a third cheese (Muenster) on top of the second slice and then piled on the ingredients as instructed. It helped to hold the avocado chunks in the place too. I used whole grain wheat bread and it was killer.

Good concept but a little bland. I agree needs something to make it pop. And very messy to eat so next time - when experimenting with seasonings - will slightly mash the avocado to make a better “bed” for the egg. I like this idea! Will make again with some tweaks. Thanks Tricia for some new breakfast inspiration.

A two-fisted sandwich! Enjoyed it on sourdough bread. I’ll add a little mustard next time, or sub a grilled sausage patty for one of the eggs just for variety.

This breakfast was delightful to have. Initially, I thought that having more eggs would fill me up, but I ended up not finishing it. Overall, I recommend this breakfast—it was fulfilling and enjoyable. I’d rate it 4 out of 5 because I made my own adjustments, opting for no cheese and more eggs.
