I have been searching for the perfect sausage recipe and finally found it! I just tried this recipe and sampled some leftover scraps - it was amazing. I substituted 1 1/2 tsp of fennel seed for the clove since I didn't have any. I rolled the sausage out to about 3/8" thickness between two layers of waxed paper and plastic wrap to protect my wooden roller. Then, I cut out rounds using a three-inch biscuit cutter, rerolling and cutting until only a few scraps were left. I ended up with 18 rounds and some scraps for tasting. It was absolutely delicious!
