Rice and Quinoa Breakfast Pudding Recipe
Ingredients
- 1 cups cooked quinoa, divided
- 1 cups cooked brown rice, divided
- 1 cups almond milk
- 1 tablespoon honey
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 egg
- 1 tablespoon vanilla extract, or more to taste
- 2 teaspoons pumpkin pie spice
Directions
Step 1: In a pot over medium heat, combine 1 cup quinoa, 1 cup brown rice, almond milk, honey, brown sugar, and salt. Stir the mixture until the almond milk is heated through, which should take about 5 minutes.
Step 2: In a small bowl, whisk the egg. Slowly add a bit of the hot milk mixture to the egg, stirring gently to gradually bring the egg to room temperature.
Step 3: Pour the warmed egg mixture into the saucepan with the rest of the ingredients. Then add the remaining cup quinoa, cup brown rice, vanilla extract, and pumpkin pie spice. Bring the mixture to a boil.
Step 4: Once boiling, reduce the heat to a simmer and cook for 10 to 15 minutes until the mixture thickens.
Step 5: Once thickened, scoop the mixture into two serving bowls and serve warm.
Cook's Note:
If you dont have pumpkin pie spice, you can easily substitute with a combination of nutmeg, cinnamon, ginger, and allspice. There are plenty of recipes online to guide you in creating your own spice blend.
