Orange Pecan French Toast

Ingredients

  • 1 cup packed brown sugar
  • cup butter, melted
  • 2 tablespoons light corn syrup
  • cup chopped pecans
  • 12 (3/4 inch thick) slices French bread
  • 1 teaspoon grated orange zest
  • 1 cup fresh orange juice
  • cup 2% milk
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 egg whites
  • 2 eggs
  • 1 tablespoon confectioners' sugar for dusting

Directions

  1. In a small bowl, combine the brown sugar, melted butter, and corn syrup. Stir well to blend.
  2. Pour this mixture into a greased 9x13 inch baking dish and spread evenly to coat the bottom.
  3. Evenly sprinkle the chopped pecans over the sugar mixture.
  4. Arrange the slices of French bread in a snug, single layer at the bottom of the dish.
  5. In a medium bowl, whisk together the orange zest, fresh orange juice, milk, sugar, ground cinnamon, vanilla extract, egg whites, and eggs until well combined.
  6. Pour this mixture over the bread slices, pressing gently on the bread to ensure the liquid is absorbed.
  7. Cover the baking dish with plastic wrap or foil and refrigerate for at least one hour, or overnight for best results.
  8. Preheat the oven to 350F (175C). Remove the cover from the baking dish and let it sit at room temperature for 20 minutes.
  9. Bake the casserole for 35 minutes, or until golden brown on top.
  10. Once baked, dust with confectioners' sugar just before serving.

Air Fryer Option

If you prefer to make this in your air fryer, follow the recipe through Step 2. Line your air fryer basket with foil and coat it with cooking spray. Arrange half of the pecan mixture in an even layer on the foil. Preheat the air fryer to 375F (190C). Place half of the bread slices on top of the pecans. Cook for 12 minutes, flipping halfway through, until the outside is golden and the inside is creamy. Transfer to a serving platter and keep warm. Repeat the process with the remaining ingredients.

This recipe is fantastic! While I didn't make any major changes, I did make a few tweaks based on what I had on hand. I swapped pecans for walnuts and included some orange-infused cranberries when layering the bread. The resulting flavor was superb, and the walnuts added a delightful contrast to the richness of the French toast. One tip I would suggest is letting it sit for about 10-15 minutes before serving. This time allows the butter, sugar, and syrup mixture to caramelize nicely, and the French toast retains its heat for a while. I have been making this recipe at least twice a year since I discovered it years ago, often for special holiday mornings. I prefer using challah instead of French bread and have found that cutting the entire loaf into 1-inch pieces works best compared to using larger slices. I like to double the liquids (milk and orange juice), incorporate a few extra eggs or egg whites, and then mix the bread into the liquid mixture - I find this coats the bread better. I tend to cook it a bit longer than the prescribed time in the recipe due to the increased liquid content. The dish is already sweet enough, so there's no need for additional syrup or powdered sugar. It has truly become a favorite recipe for our family and a must-keep in our collection!

I didn't follow the recipe exactly, as I usually go with the "that looks good enough" approach. I simplified the recipe by using the zest and juice of one orange. I scaled down the portion size and used regular whole wheat bread instead of egg whites, opting for 2 eggs instead. The result? The most delicious French toast I've ever had! I wholeheartedly recommend this recipe!

I prepared this dish for Christmas morning and it was a hit with everyone. I made a few modifications: I added 3/4 cup of pecans since we're big fans of them, and I toasted them before incorporating them. Instead of finely chopping the pecans, I simply broke them into smaller pieces. I reduced the amount of brown sugar to 3/4 cup and even then it was slightly too sweet for my liking, so next time, I might try using 2/3 cup. I also used a generous amount of orange zest, adding a heaping teaspoon. Overall, the dish turned out to be absolutely delicious!
