Microwave Longaniza con Huevos Recipe
Ingredients

- 5 ounces longaniza, casing removed
- 3 eggs
- Salt to taste
- Ground black pepper to taste
Original recipe yield: 2 servings
Directions
Step 1: Place the longaniza in a microwave-safe bowl. Cover it with a paper towel and microwave on high for 1 minute.
Step 2: Remove the bowl and break up the longaniza into smaller pieces. Cover again with a paper towel and microwave for another 1 minute.
Step 3: Stir the longaniza, cover it once more, and microwave for an additional 1 minute.
Step 4: Remove the bowl from the microwave and mix in the eggs until fully incorporated.
Step 5: Return the bowl to the microwave and cook for 45 seconds. Stir the mixture, then continue cooking until the eggs are set, about 45 more seconds.
Step 6: Season with salt and black pepper to taste. If the longaniza releases excess grease, drain it before adding the eggs.
Cook's Note
I used Aldi's brand of longaniza, which is not overly greasy. Adjust cooking time slightly if using a different brand.
