Kefir Yogurt (Sana) Recipe

Ingredients

This recipe was developed at its original yield. Ingredient amounts adjust automatically, but cooking times and steps remain the same. Note that not all recipes scale perfectly. Original recipe (1X) yields 8 servings.

  • 4 cups milk
  • cup instant nonfat dry milk powder (adjust to taste)
  • cup plain kefir

Directions

Step 1: Preheat your yogurt maker or slow cooker on Low according to the manufacturer's instructions.

Step 2: In a medium saucepan, whisk together milk and nonfat dry milk over medium heat. Heat until the mixture is almost boiling, about 4 minutes.

Step 3: Remove from heat and allow the milk to cool until lukewarm, approximately 100 to 110F (38 to 45C).

Step 4: Gently stir in the kefir until fully incorporated, being careful not to overmix.

Step 5: Pour the mixture into yogurt s or jars with airtight lids, then place them in the preheated yogurt maker or slow cooker.

Step 6: Cook on Low until the yogurt reaches your preferred tartness and consistency, usually 4 to 10 hours.

Step 7: Once ready, chill the yogurt in the refrigerator for at least 2 hours before serving.

This was so easy and totally delicious - loved how creamy it turned out, and it was perfect with my usual nuts and honey. I cannot believe I just made my own yogurt :)

I like the texture and the flavor. It is so smooth and creamy. I was surprised how easy it was. I used my slow cooker for the warm up then switched my machine to yogurt maker. I wonder if anyone made flavored yogurt. What did you do?

Best tasting yogurt ever. No fruit or homey needed. I can eat it plain. Great recipe. It took 8 hours to get it to the thickness I like with a yogurt maker. It put half in a crock pot but the texture is not nearly as good as the yogurt maker even though the crock pot was faster.
