Ingredients

  • 1 tablespoon cornstarch
  • 1 dash cinnamon
  • teaspoon nutmeg
  • 1 cups unsweetened apple juice
  • 1 apple - peeled, cored and thinly sliced
  • 2 slices whole wheat bread
  • 1 tablespoon apple syrup
  • teaspoon cinnamon
  • 2 teaspoons light brown sugar

Directions

  1. In a small saucepan, combine cornstarch, cinnamon, nutmeg, and apple juice. Whisk until well blended.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer. Stir continuously for about 5 minutes or until the mixture thickens slightly.
  3. Once thickened, remove from heat and store in an airtight . Refrigerate until ready to use.
  4. Preheat the oven to 500F (260C).
  5. Place the sliced apple in a microwave-safe dish and drizzle with apple syrup. Microwave on high for 1 minute or until the apple becomes tender. Set it aside.
  6. Toast the bread slices, then arrange the tender apple slices on top of the toasted bread.
  7. Drizzle the apple syrup over the bread and apple slices.
  8. Place the prepared bread and apple slices in the preheated oven. Bake for 5 minutes, keeping a close eye to prevent burning.
  9. If desired, sprinkle with a pinch of cinnamon before serving.
  10. Serve immediately and enjoy!
