  • 4 slices bacon
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup mayonnaise
  • 8 ounces Swiss cheese, shredded
  • 2 green onions, finely chopped
  • 4 buttery round crackers, crushed

Directions

Follow these simple steps to make a creamy and savory bacon dip:

  1. Place the bacon in a large skillet and cook over medium-high heat until evenly browned.
  2. Once the bacon is cooked, drain it, crumble it into small pieces, and set it aside.
  3. In a small bowl, combine the softened cream cheese with mayonnaise. Stir until the mixture is smooth and well blended.
  4. Add the shredded Swiss cheese, chopped green onions, and crumbled bacon to the cream cheese mixture. Stir everything together until evenly combined.
  5. Transfer the bowl to the microwave and cook for 2 minutes. After 2 minutes, remove the bowl and stir the mixture well.
  6. Return the bowl to the microwave and continue to cook for an additional 2 to 4 minutes, or until the dip is heated through and bubbling.
  7. Sprinkle the crushed buttery round crackers on top of the dip to add a crunchy texture.
  8. Serve the dip warm, accompanied by additional crackers or your favorite dipping snacks.

Rewritten review: This dip turned out amazing with a few tweaks: I substituted 8oz of shredded cheddar for the Swiss cheese, added 1 cup of shredded Parmesan cheese, used 1/3 cup of mayo, included 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and doubled the bacon. I kept the cream cheese, green onions, and cracker amounts the same. After baking the dip for 20 minutes at 350°F, I stirred the mixture in the last 5 minutes and topped it with crushed Ritz crackers. The dip had a perfect texture (reducing the mayo and adding the absorbent Parmesan cheese definitely helped) and it tasted absolutely delicious!

I always double this recipe because it's a hit every time! I use 2 cups of shredded cheddar cheese, 2 packages of cream cheese, 16 oz of light sour cream, 2 packages of 3 oz bacon bits, and a dash of garlic powder. Simply stir and bake for 20 minutes at 350 degrees. Then transfer it to a warm crockpot and serve with Ritz crackers. It's easy to spread and always disappears at parties - a definite crowd pleaser!

I presented this dip at a jewelry party, and it was a hit with the ladies! Some even asked me for the recipe before they left. I did make a few modifications, though. Instead of one package of cream cheese, I used two, included a minced garlic clove for extra flavor, and opted for half a package of real bacon bits to avoid the bacon smell lingering in my house before the party. I mixed everything together, topped it with an additional 4 oz. of shredded Swiss cheese, and sprinkled some more bacon bits on top. After baking it in the oven at 375 degrees for around 15-20 minutes, it turned out absolutely delicious when served with whole wheat crackers and sesame sticks.

I tried a variation of this recipe for the Super Bowl party and it was a hit! After reading some reviews mentioning separation and greasiness, I made a few tweaks that worked really well. Here are my tips: 1. Cut the swiss cheese into 5-6 ounce portions to prevent it from being overpowering. 2. Replace half of the mayo with sour cream for a lighter texture. 3. Add a teaspoon of garlic powder for extra flavor. 4. Beat together cream cheese, sour cream, mayo, swiss cheese, garlic powder, and onions on high speed. 5. Chill the mixture for 20-30 minutes before baking (do not microwave). 6. Bake at 350 degrees for 20-25 minutes until the edges are golden brown and bubbly. 7. In the last 5 minutes of baking, sprinkle the mixture with crushed crispy bacon and crackers. This dip is perfect for serving with crackers or veggies at any gathering. Highly recommended!

The appetizer was a hit with the crowd - it disappeared in no time! After reading through some reviews, I made a few adjustments: I used 8 slices of center-cut bacon, 1/3 cup of mayonnaise, 1/2 cup of sour cream, 5 green onions, a dash of tabasco (around 1/3 tsp), along with 2 ounces of cheddar and 6 ounces of swiss. I skipped the buttery crackers and instead heated it in my small crock pot for about 90 minutes. It was a hit, with several people requesting the recipe.

Rewritten review: Initially, this dip recipe received 3 stars from me. I first tried it years ago at a party and loved the flavor, but found it too greasy and less appealing as it cooled. However, after making some revisions, this dip has become a crowd favorite at every gathering I attend! I use light or fat-free mayo, Neufchatel cheese, and shredded Monterey Jack cheese in equal parts. Blend these ingredients with scallions and press into a microwave-safe dish. Crush Ritz crackers and mix with bacon bits, then sprinkle over the cheese mixture before microwaving for 7 minutes until bubbly. This version is fantastic - gooey and delicious without being greasy. I serve it with breadsticks, melba toast, or bagel chips, and it's always a hit!

We prepared this dish for a family Christmas gathering, and it was a huge success! We served it in a small crockpot with bacon-flavored Ritz crackers, and it was the first dish to disappear among all the offerings. I'm confident that even if we had made more, it would've been devoured too. The recipe was straightforward to follow, and the instructions were spot on. The only modification I made was adding an extra 3 pieces of bacon (simply because I adore bacon) and an additional stalk of green onion. We will definitely be preparing this dish again in the future.
