I made this for our Thanksgiving celebration. This was absolutely scrumptious!! It was a hit with everyone! I actually used dark Karo syrup instead of light, and it added an even richer taste. For those saying it gets too hard after cooling. Just do not cook it as long next time. I let mine simmer for about a minute then let it sit for about two minutes. If it’s still too hard, I add about 1/8 to 1/ 4th cup of Karo syrup from the jar into the hardened mixture, and stir well until softer. This gets 5 stars for how wonderful it tastes, how easy it is to prepare, and how yummy and appetizing it looks on a party table! I also personally added a little more whip cream, and a little less cream cheese to the bottom layer for a lighter taste. But that’s just my personal preference. This really is my new favorite and will be taking to all my holiday parties this Christmas Season.

This was fantastic. I cooked the butter, sugar, and Karo syrup together, then added bourbon. Once the alcohol cooked off, I added a bit more butter to it, tempered the egg, and added that. Cooked for another minute and then added the pecans last. I’m sure it would have been great as written, but I wanted to add a bit more adult flavoring to it and had to change up the cooking a bit because of that. It was fantastic.

The topping is fantastic. Might be better to roast the pecans first to get a better texture from them. The cream cheese part would be better if you did a no bake cheesecake. Like the traditional Philly no bake cheesecake. We don’t like how slimy the cool whip made the bottom part.
