French Onion Soup with Port Wine Recipe

Ingredients
- 3 tablespoons butter
- 3 tablespoons olive oil
- 6 white onions, sliced into thin rings
- 1 clove garlic, minced
- 1 pinch salt, plus more to taste
- 1 teaspoons ground black pepper, plus more to taste
- 1 tablespoon brown sugar
- 1 tablespoon dried thyme
- cup port wine
- 1 (32 ounce) carton beef stock
- 5 slices French bread
- 5 slices Swiss cheese
- cup shredded Parmagiano-Reggiano cheese
Directions
- In a large pot, melt butter with olive oil over medium-low heat.
- Add sliced onions and minced garlic. Season with a pinch of salt and black pepper. Stir to combine.
- Cook the onion mixture, stirring every 10 minutes to prevent browning too quickly, until the onions are caramelized. This will take about 1 hour.
- Once the onions are caramelized, stir in brown sugar and thyme. Allow the sugar to melt into the onions for about 2 minutes.
- Pour in the port wine, scraping any browned bits from the bottom of the pan with a wooden spoon. Bring the mixture to a boil and continue simmering for an additional 5 minutes.
- Pour in the beef stock and continue to cook for another 10 minutes. Taste and adjust the seasoning with more salt and pepper if needed.
- Preheat the oven's broiler to high. Place 5 oven-safe crocks onto a baking sheet.
- Evenly ladle the soup into the crocks. Top each serving with a slice of French bread, followed by a slice of Swiss cheese. Sprinkle with Parmagiano-Reggiano cheese on top.
- Place the crocks under the preheated broiler for 2 to 3 minutes or until the cheese is melted and browned.
