Tomato Bisque Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • cup diced celery
  • 1 pinch salt
  • 3 cloves garlic, chopped
  • 1 (32 ounce) chicken broth, or more as needed
  • 1 (28 ounce) can crushed San Marzano tomatoes
  • teaspoon paprika
  • 1 pinch freshly ground black pepper, or to taste
  • 1 pinch cayenne pepper, or to taste
  • 3 tablespoons uncooked jasmine rice
  • 1 teaspoon white sugar, or to taste
  • cup heavy whipping cream
  • salt and freshly ground black pepper to taste
  • 2 tablespoons heavy whipping cream, divided
  • 2 tablespoons thinly sliced fresh basil leaves, divided

Directions:

  1. Gather all ingredients and prepare them as instructed.
  2. Heat olive oil in a large pot over medium heat. Add diced onion and celery, sprinkle with a pinch of salt, and cook for 5 to 8 minutes, stirring occasionally, until the onion becomes translucent.
  3. Stir in chopped garlic and cook for about 1 minute until fragrant.
  4. Pour in the chicken broth and crushed tomatoes, mixing them into the onion mixture. Bring to a simmer.
  5. Season with paprika, black pepper, and cayenne pepper. Lower the heat and stir in the uncooked jasmine rice.
  6. Skim off any foam that rises to the surface occasionally while the soup simmers. Let it cook for about 35 to 45 minutes until the rice and vegetables are tender.
  7. Add 1 teaspoon of white sugar and stir to combine.
  8. Blend the soup using an immersion blender directly in the pot until it reaches a smooth consistency.
  9. Whisk in cup of heavy cream into the soup. Taste and adjust seasoning with salt, black pepper, cayenne pepper, and sugar as necessary.
  10. If the soup is too thick, add more chicken broth to reach your desired consistency. If it's too thin, continue cooking and stirring for about 10 minutes until it thickens slightly.
  11. Ladle the soup into warmed bowls and garnish with a drizzle of cream and a sprinkle of freshly chopped basil.
