Tomato Bisque Recipe

Ingredients:
- 1 tablespoon olive oil
- 1 cup diced onion
- cup diced celery
- 1 pinch salt
- 3 cloves garlic, chopped
- 1 (32 ounce) chicken broth, or more as needed
- 1 (28 ounce) can crushed San Marzano tomatoes
- teaspoon paprika
- 1 pinch freshly ground black pepper, or to taste
- 1 pinch cayenne pepper, or to taste
- 3 tablespoons uncooked jasmine rice
- 1 teaspoon white sugar, or to taste
- cup heavy whipping cream
- salt and freshly ground black pepper to taste
- 2 tablespoons heavy whipping cream, divided
- 2 tablespoons thinly sliced fresh basil leaves, divided
Directions:
- Gather all ingredients and prepare them as instructed.
- Heat olive oil in a large pot over medium heat. Add diced onion and celery, sprinkle with a pinch of salt, and cook for 5 to 8 minutes, stirring occasionally, until the onion becomes translucent.
- Stir in chopped garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth and crushed tomatoes, mixing them into the onion mixture. Bring to a simmer.
- Season with paprika, black pepper, and cayenne pepper. Lower the heat and stir in the uncooked jasmine rice.
- Skim off any foam that rises to the surface occasionally while the soup simmers. Let it cook for about 35 to 45 minutes until the rice and vegetables are tender.
- Add 1 teaspoon of white sugar and stir to combine.
- Blend the soup using an immersion blender directly in the pot until it reaches a smooth consistency.
- Whisk in cup of heavy cream into the soup. Taste and adjust seasoning with salt, black pepper, cayenne pepper, and sugar as necessary.
- If the soup is too thick, add more chicken broth to reach your desired consistency. If it's too thin, continue cooking and stirring for about 10 minutes until it thickens slightly.
- Ladle the soup into warmed bowls and garnish with a drizzle of cream and a sprinkle of freshly chopped basil.
