Cucumber Nut Bread Recipe

Ingredients (12 Servings)

- 2 cups peeled, seeded, and shredded cucumber
- 3 eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 1 teaspoon vanilla extract
- 1 cup coarsely chopped pecans
- 3 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 1 teaspoon baking soda

Directions
Step 1: Preheat your oven to 325F (165C). Lightly grease two 5x9-inch loaf pans with cooking spray.
Step 2: Place the shredded cucumber in a colander and allow it to drain for about 30 minutes. This helps reduce excess moisture in the bread.
Step 3: In a large mixing bowl, combine the eggs, vegetable oil, sugar, vanilla extract, drained cucumber, and chopped pecans. Stir everything together until fully incorporated.
Step 4: In a separate bowl, whisk together the flour, cinnamon, baking soda, salt, baking powder, nutmeg, and cloves.
Step 5: Gradually add the dry ingredients to the wet ingredients, stirring until the batter is completely mixed and smooth.
