Cucumber Nut Bread Recipe

Cook Time: 50 minutes

This delightful recipe results in a moist, flavorful bread with a perfect balance of spices and crunch from pecans. Ideal for an afternoon snack or a breakfast treat!

Ingredients (12 Servings)

  • Cooking spray
  • 2 cups peeled, seeded, and shredded cucumber
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 1 cup coarsely chopped pecans
  • 3 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • teaspoon salt
  • teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves

Directions

Step 1: Preheat your oven to 325F (165C). Lightly grease two 5x9-inch loaf pans with cooking spray.

Step 2: Place the shredded cucumber in a colander and allow it to drain for about 30 minutes. This helps reduce excess moisture in the bread.

Step 3: In a large mixing bowl, combine the eggs, vegetable oil, sugar, vanilla extract, drained cucumber, and chopped pecans. Stir everything together until fully incorporated.

Step 4: In a separate bowl, whisk together the flour, cinnamon, baking soda, salt, baking powder, nutmeg, and cloves.

Step 5: Gradually add the dry ingredients to the wet ingredients, stirring until the batter is completely mixed and smooth.

Step 6: Spoon the batter evenly into the prepared loaf pans. Use a spatula to smooth the tops if needed.

Step 7: Bake the loaves in the preheated oven for 50 minutes to 1 hour, or until they are lightly browned and a toothpick inserted into the center of each loaf comes out clean.

Step 8: Allow the loaves to cool in the pans for about 10 minutes before transferring them to wire racks to finish cooling completely.
