Caramel Popcorn Brownies Recipe

Caramel Popcorn Brownies Recipe

Cook Time: 35 minutes

This indulgent treat combines the rich, fudgy goodness of brownies with the crunch of popcorn and a sweet caramel drizzle, making it a perfect dessert for any occasion.

Ingredients

  • 1 package (19.8 ounces) brownie mix
  • 1/4 cup water
  • 1/4 cup vegetable oil
  • 1 egg
  • 3 cups popped popcorn
  • 1/2 cup peanuts
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter chips
  • 1/2 cup butter
  • 1/2 cup brown sugar

Directions

Step 1: Preheat your oven to 325F (165C). Grease a 9x13-inch baking dish with butter or cooking spray.

Step 2: In a mixing bowl, stir together the brownie mix, water, vegetable oil, and egg until fully combined.

Step 3: Pour the brownie batter into the prepared baking dish, spreading it evenly across the bottom in a thin layer.

Step 4: Scatter the popped popcorn over the brownie batter, gently pressing it into the batter to ensure it sticks.

Step 5: Evenly sprinkle the peanuts, chocolate chips, and peanut butter chips over the popcorn layer.

Step 6: In a small saucepan, melt the butter over medium heat. Once melted, whisk in the brown sugar and bring the mixture to a boil while stirring constantly. Allow it to cook for about 3 minutes, until it reaches a thin caramel consistency.

Step 7: Drizzle the caramel over the popcorn and brownie mixture in the baking dish, ensuring it is evenly coated.

Step 8: Bake in the preheated oven for 30 to 35 minutes, or until the brownies are set and a toothpick inserted into the center comes out with just a few moist crumbs.

Step 9: Remove from the oven and allow the brownies to cool completely before cutting into squares or bars.

I absolutely loved these brownies! They were incredibly delicious and so easy to make, requiring hardly any extra effort compared to using a regular box mix. Don't let the fact that the recipe calls for a boxed mix deter you - you can easily substitute it with your own brownie recipe and still achieve the same amazing results. I didn't have any peanuts on hand, so I used shaved almonds instead, which turned out great, but I can only imagine how fantastic they would be with the peanuts. Just a heads up, they took much longer to bake in my oven, nearly 55 minutes, so keep that in mind when you're making them. Overall, thank you for sharing this wonderful recipe!

Extremely convenient for a potluck contribution. I opted for caramel chips instead of preparing caramel syrup. The recipe was a hit with everyone. Thank you!

I tried this recipe and omitted the peanut butter chips, so I doubled the chocolate chips instead. Next time, I'll add more popcorn as mine was a bit sparse. The kids at the school where I volunteer absolutely loved it!

I prepared this dish and found the popcorn to be a bit tough, but overall it was delicious.

Rewritten review: I love baking and cooking, but I don't have much experience making Caramel Sauce, so I decided to try out this recipe. Unfortunately, the end result was not what I had expected. The sauce turned out too oily and the ratio of sugar to butter was off. I searched for another recipe and realized that this one called for way too much butter. After adjusting the amount of butter, the Caramel Sauce turned out perfect. It seems like there may have been a misprint or error in the recipe that led to the excessive amount of butter. Proceed with caution when making your own caramel sauce! In my opinion, the correct ratio should be 3 tablespoons of butter to 1/2 cup of brown sugar.

These brownies are fantastic! While they require a few extra steps compared to regular brownies, the end result is well worth it. I prepared them for a Super Bowl party and they were a huge hit with everyone. I did come across a review mentioning issues with the brownies falling apart and the caramel and popcorn burning. However, I followed the recipe closely (excluding nuts as I'm not a fan) and didn't experience any of those problems. They were slightly crumbly, but easy to enjoy without needing a fork. I will definitely be making these again in the future. The only downside is that they are incredibly addictive!

I attempted to make brownies from scratch following the instructions exactly. Unfortunately, the caramel sauce did not turn out well and ended up burning in the oven after I had drizzled it on. I tried my best to salvage the popcorn that had the most burnt caramel on it. The popcorn also seemed to become slightly stale during the baking process. The pieces were difficult to cut and fell apart easily. While the taste was decent (albeit overly sweet), dealing with the burnt caramel and the crumbly pieces made serving and enjoying the brownies quite a challenge.
