Baked Eggs in Avocado with Bacon
Avocado Baked with Egg and Bacon
Ingredients
- Cooking spray
- 1 avocado, halved and pitted
- 2 eggs
- Kosher salt and freshly cracked pepper, to taste
- 2 slices Pure Farmland Uncured Bacon, cooked and crumbled
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh chives
- Smoked paprika, for garnish
- teaspoon hot sauce of choice, for garnish
Directions
Step 1: Preheat the oven to 425F (220C). Lightly spray a baking sheet or a glass baking pan with cooking spray.
Step 2: Scoop out 1 to 2 tablespoons from each avocado half to create a well for the egg. Place the avocado halves, flesh-side up, on the prepared baking sheet or pan.
Step 3: Gently crack an egg into each avocado well, being careful not to break the yolk. Season with kosher salt and freshly cracked pepper to taste.
Step 4: Bake in the preheated oven for 15 to 18 minutes, or until the eggs are cooked to your desired level of doneness.
Step 5: Once done, remove from the oven and top with crumbled bacon, grated Parmesan cheese, and chopped fresh chives.
Step 6: Garnish with a sprinkle of smoked paprika and drizzle with hot sauce of your choice for an added kick.
