Energy Balls Recipe

Ingredients

  • 1 cup old-fashioned oats
  • cup peanut butter
  • cup ground flax seed
  • cup chocolate chips
  • cup honey
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

Directions

  1. Start by gathering all the ingredients.
  2. In a large bowl, combine oats, peanut butter, ground flax seed, chocolate chips, honey, chia seeds (if using), and vanilla extract.
  3. Mix everything thoroughly until well combined.
  4. Cover the bowl with plastic wrap and chill the dough in the refrigerator for 30 minutes.
  5. Once chilled, remove the dough from the fridge and roll it into 20 balls, each about 1 inch in diameter.
  6. Arrange the balls on a tray or plate and refrigerate them until firm, about 10-15 minutes.

Cook's Note

If you prefer bars over balls, simply press the dough into a parchment-lined baking sheet and cut it into squares after chilling.

Storage

Store the energy balls in an airtight in the refrigerator for up to 1 week.

My entire family LOVES THESE just as written. The only thing I do differently is put all ingredients in my food processor and pulse until blended, scoop out and press flat in a glass dish which I then freeze. We can then cut them into bars! takes out a ton of the work from rolling into balls and mixing by hand!

These are fantastic, healthy, and delicious snack. I've made them several times now and have found that a few extra ingredients really puts these balls over the top. I add cinnamon, cocoa powder, double the chia seeds, and semisweet chocolate chips. Along with that, I've been switching out peanut butter for the extravagant Nutzo (cashew, peanut, brazil nut, etc) butter and agave nectar for honey. Forming the dough into a baking sheet definitely expedites the process and makes for uniform servings. However, the ball form is extremely fun to eat! I also recommend after mixing the dough, put it through the food processor for a few pulses. With various whole ingredients reduced to smaller pieces, they will be easier to eat. I make double this recipe once a week. It's a winner. I can't stop. Thank you.

These are incredible! I have been making them for months and are a perfect work snack. I started putting the chocolate chips and some chocolate covered espresso beans in the coffee grinder and adding them. It's awesome! My husband takes them for him and his friends golfing and they all wanted the recipe. So glad I found this! Oh and I also used a rolling pin and rolled them flat and cut them into bars (see cooks note) This is my go to from now on. Quicker and easier to eat.

I have made these several times. One tip - measure out the oats, then put them in food processor. The balls form much easier; you do not need to chill first. I add 2/3 cups of shredded coconut. We like to eat them straight out of the freezer!

Great easy recipe plus so easy to adapt. I only had large size chocolate chips so used processor to mix everything, which chopped the chips finer as well as the oats. I also included coconut and 1T coconut oil which helped bind and gave nice shine. I subbed brown rice syrup. Much easier in processor than mixing by hand. Will definitely make again.

So good, I added dried cranberries and chopped mango, chopped walnuts, pumpkin seeds, ground flax and Lilly's semi sweet chocolate chips...these tiny balls are super filing and tasty treats. I eat just one meal a day and these balls are great to add to my breakfast time slot with coffee and in the evening as an evening snack with tea. I get full on just one ball they are so filling.

Great snack for kids and adults! I warmed the peanut butter in the microwave before stirring everything together. It blended very easily and evenly! I doubled the chia seeds. I substituted half the honey with some cane sugar syrup so it wasn’t too honey flavored. We are already making our second batch!! Store in freezer for longer life.

My 4 year old son loves these!! Thank you!! I used a food processor to ground up the oats and choc chips; cut the choc chips in half and used Kirkland organic peanut butter.

These are so good. I did not have rolled oats so instead, I used old fashioned and it turned out fine. I only used half the flax meal and used toasted coconut for the other half. Used half the chocolate chips and subbed toffee pieces for the other half. The nice thing about this recipe is that you can use different types of chocolate chips to customize the taste.

Changed a few things. Did not add flax since I had none. Added 1/4 cup chia and 1 cup plain Rice Krispies cereal. Added 1/2 amount of honey and added raisins. Came out great.

I’ve made this recipe probably over 10 times now. Thank you so much for sharing. I just made a little tweak, which was easier for me. After mixing ingredients I placed it between two sheets of wax paper that fit a sheet pan. Then rolled the mix flat. Next chill. Cut in to squares and store with wax paper in between. Worked well because it’s delicious but sticky! :)

Easy and husband loves them. The recipe is great as written but, I change them up a bit sometimes adding sunflower seeds or using chocolate or crunchy peanut butter. I also like to add toasted coconut. When I make them, I use a silicone mini muffin pan, pressing them in and chilling then just popping them out and store in container in refrigerator. Much easier than rolling into balls.

These are amazing and guilt-free. Have made them several times now. My latest trick, press mixture down into a bottom-lined 7x7 springform pan. Chill, pop it out, cut into squares.
